As a high-quality food of human being, milk and milk products play an increasingly important role in the improvement of people's life. Milkfat, the important nutritional ingredient of milk and milk products, supplies for diverse fatty acids beneficial to human, including some fatty acids human can only take in from food.The present standards employed in analysis of fatty acids contained in foods, however, can only determine one or several certain kinds of fatty acids. This limitation means an urgent demand to develop new methods to simultaneously measure fatty acids in samples.In this study focused on the research of determination of fatty acid in the milk and dairy products with ammonia-ethanol method and acetyl chloride-methanol methyl esterification method.Parameters involved in the two methods were optimized and the applicable scope of the methods were discussed in this paper. Also standardizational applicaition about determination of composition of fatty acids in milk and dairy products also is given.Ammonia-ethanol method and acetyl chloride-methanol methyl esterification method developed in this paper to measure fatty acids in milk and milk products, can simultaneously determine multi-kind fatty acids in samples, with satisfactory sensitivity, accuracy, precision, and reproducibility.In Chapter1 the achievements and present open questions on the research of fatty acid in the milk and dairy products is simply introduced; Chapter 2 introduces primary research of fatty acids analytic system with acetyl chloride-methanol methyl esterification method ; Chapter 3 introduces primary research of analytic system with Ammonia-ethanol method ; Chapter 4 is emphasized on data analysis of measurement results between two methods; Chapter 5 introduces of standardizational applicaition about determination of composition of fatty acids in milk and dairy products ; Finnaly the results and conlusions of the paper and the questions remaining to be resolved are given.
