Rice bran as a byproduct of rice processing is the rice milled from the surface except for brown rice bran layer and germ, about the quality of rice grain of 7.5% to 8.0%.Although rice bran is rich in protein, fat, vitamins and cellulose, but more than rice bran used as feed material, its value has not been fully exploited.China is the world's largest rice producer, with annual pr- oduction of more than 10 million tons of rice bran, rice bran and effective use of resources have significant economic value and practical significance.As the purpose of the depth of processing and utilization of rice bran ,the paper studied methods and techniques of rice bran nutrient solu- tion ,using rice bran protein on the enzymatic hydrolys to prepare it.This paper first used,inclu- ding fresh rice bran, defatted rice bran, puffed rice bran rice bran,5 different raw materials and different treatments,including grinding, adding cellulase orα-amylase, to compare the different tests to explore merits of different raw materials rice bran and pretreatment,and suitable raw materials and pretreatment of rice bran.Then extruded rice bran and defatted rice bran as raw material,rice bran pretreated with different types of proteinase digestion process experiment, the extraction rate of soluble protein, peptide hydrolysis degree and rate of index, the type of enzyme (acid protease, neutral protease, alkaline protease and protamex) and the solid-to-liquid ratio,enzyme dosage, pH value,hydroly- sis temperature, and hydrolysis time of the indexes, and through orthogonal experiment, the op- timum hydrolysis conditions.The paper also prepared on the enzymatic hydrolysis of rice bran rice bran protein nutrition product traits, including sensory evaluation, analysis of colors diff- erence determination of soluble solids content, amino acid analysis, protein determination, as protease solution based on rice bran rice bran nutrient production and provide a basis .In this study, the main conclusion is as follows.1) After the first treatment of rice bran, rice bran nutrient extraction rate of soluble matter and soluble protein extraction rate has increased significantly. Preparation of rice bran nutrient solution suitable for pretreatment process are: rice bran→plus water (solid to liquid ratio 1∶5) mixed grinding→andα-amylase (enzyme dosage of 0.4%, pH value of 6.5, temperature 60℃)→water boiler the insulation 2h.2)Soluble protein extraction rate as an indicator of enzymatic hydrolysis of extruded rice bran nutrient optimum conditions: temperature 45℃, pH value of 7.5, enzyme dosage 1000U/g, holding time of 3h, soluble protein extraction rate up to 29.83%. Degree of hydrolysis as an in- dicator of the optimum conditions: temperature 50℃, pH value of 7.5, enzyme dosage 1000U / g , holding time of 4.0h, the degree of hydrolysis up to 4.69%.3) Soluble protein extraction rate target alkaline protease enzyme preparation of defatted rice bran rice bran nutrient solution of the optimum conditions: temperature 50℃, pH value of 8.5, enzyme dosage 750U/g, holding time of 3h, soluble protein extraction rate up to 45.06%. Peptides yield as the index of the optimum conditions: temperature 45℃, pH value of 9.0, en- zyme dosage 1000U/g, holding time of 4.0h, peptide yield up to 35.81%.4) rice bran nutrient is the light brown color of deep brown, nonfat rice bran hydrolyzate home long after stratification. Rice bran products with different nutrition is large difference bet- ween the soluble solids content, a minimum of 2.72%, maximum 8.33%. Various amino acids of rice bran nutrient products as well as amino acids in total is about 5 times the blank exper- iment, amino acids can reach 1000mg/100ml around.Protein molecular weight of rice bran nutrient products is 2kDa.
