A surfactant with good performance in alkaline environment is prepared with octenyl succinic anhydride and sugar. Its related properties, including esterification conditions, physical and chemical properties, transparency, emulsification and foaming are discussed. Its application in microencapsulation and dishwashing detergent is studied with the following conclusions:1. The synthesis and property Octenyl succinate Sucrose Ester (OSA-SE) is studied. Single factor experiment is conducted to find out the influence law of the degree of substitution of Octenylsuccinate Sucrose Ester by pH, reaction temperature, reaction time, OSA invariable. Under the conditions of single factor experiment, the best synthesis parameters are found with orthogonal test:pH9.0, reaction temperature 40℃, reaction time10h, OSA invariable 10%. From the orthogonal experimentation design and extreme difference analysis, pH is shown as the most important factor, following by reaction time, reaction temperature, OSA invariable.2. The Solution of Octenyl succinate Sucrose Ester Prepared by the Wet Chemical Technique is transparent. With the Solution is more concentrated, its transmittance becomes smaller, while the transmittance of the sucrose is greater at same concentration level. Infrared spectrum shows that the peak of ester displays at 1729.05 cm-1, which is the characteristic peak of Octenyl succinate Sucrose Ester, and which is higher than the peak height of starch ester of ocentyl succinic under same experiment condition. The Solution of Octenyl succinate Sucrose Ester is good with no precipitation during the experiment, which is better than other similar category emulsifiers.3. Two-phase-emulsification technique is applied under the condition of the core material 48%; the temperature of emulsification is 70℃, homogenizing pressure is 30Mpa (homogenizing twice).The emulsion and microcapsule are better and cost less than traditional microcapsule. Microencapsulation powdered soybean oil is prepared with Octenyl succinate Sucrose Ester as emulsification. The moisture content of powdered oil is 2.38%; the ash content is 1.02%, protein content 1.29%. The powder was exquisite and uniform with fine dissolubility, ivory color, pure smell and an up to 96.2% rate of embedment. All physical and chemical indexes are qualified to the quality standard of microcapsule. The recovery emulsion was uniform with no surface oil and particles linking to the wall. It remained stable even after 24 hours. Electron Microscope Analysis on microencapsulation powdered soybean oil shows particle is spherical with smooth surface and no rupture,wall-breaking or leakage.4. The use of OSA-SE as surfactant and frother in dishwashing detergent is studied.The detergent is uniform with no suspension particles, no peculiar smell and a yellowish color; its total activity matter content is 16.5%, which is higher than normal dishwashing detergent(41.9%) in terms of detergency. Its foamability and foam stability are fine with 30.79% surface tension, which is up to the standard of dishwashing detergent. Furthermore, OSA-SE as surface tension in dishwashing detergent is innoxious, esculent in theory. Because of its small residue, being environment friendly, and low cost, its application prospect in market is promising.
