| The paper study on the optimum condition in refining process of horse oil. By means of UV,IR and GC, we preliminarily analyzed the components,structures,and content of the fatty acid in horse oil. The content of fat-soluble vitamin A,D3 and E in horse oil were assayed by HPLC. AAS method was established for the trace elements in horse oil. The premeability and the bacteria-inhibitory of horse oil were also studied.The optimal refining condition showed as below: the NaOH concentration was 8%(w/v), the reaction time at 75℃was 40 minutes. The optimal concentration of clay for decolorization was 5%, the decolorization reaction time at 60℃was 30 minutes.The spectrum feature of UV showed as follows: the horse oil have strong absorption at wavelength 210nm and 230nm, and the weak absorption at wavelength 260nm,271nm and 281nm, the resulted show that there was the conjugation system in horse oil. The spectrum feature of IR show that there wasn't absorption at wave-number 966cm-1, the results show that the transconfiguration fatty acid didn't exist in horse oil. Results showed that there were large amounts of saturated, mono-saturated and poly-unsaturated fatty acids in horse oil, among which there were large amount of palmitic acid, oleic acid, linoleic acid and linolenic acid. The content of unsaturated fatty acids was 70%, The content of ployunsaturated fatty acids was 11%, The content of oleic acid acids was 50%.The content of vitamin A in horse oil of neck was 35.95 mg/kg, The content of vitamin D3 was 24.06 mg/kg, The content of vitamin E was 71.79mg/kg, The content of vitamin A in horse oil of organ was 19.25mg/kg, The content of vitamin E was 23.48 mg/kg. The content of vitamin E in horse oil of abdomen was 23.48mg/kg.The content of kalium in horse oil of organ was 0.018 mg/kg, The content of magnesium was 61.49mg/kg, The content of natrium was 14.47mg/kg, The content of ferrum was 14.95mg/kg, The content of zincum was 12.21mg/kg, The content of magnesium in refining horse oil of organ was 6.966 mg/kg, The content of natrium was11.79mg/kg, The content of ferrum was 3.125mg/kg. The content of zincum was 11.89mg/kg. There wasn't have calcium,cuprum and manganum. The permeation rate of horse oil was also studied, The results show as follows: the horse oil of neck's permeation rate was 2.1321μL/cm2·h, the horse oil of organ's permeation rate was 1.9020μL/cm2·h,the horse oil of abdomen's permeation rate was 1.8638μL/cm2·h,the permeation rate of mutton oil was 1.2479μL/cm2·h, the permeation rate of pig oil was 0.7360μL/cm2·h, the permeation rate of groundnut oil was 1.2764μL/cm2·h.The antibacterial test results show that the horse oil had strong inhibitory activity against Staphlococcus aureus and Salmonella. The hors oil couldn't inhibit the growth of E. coli.
