The Research On The Technology Of Dissolvable Chewing Gum Of Bamboo Shoots

The technologies were introduced,which were composed of wheat gluten,zeins,bamboo shoot,and researched the technology of gum base,the rheological properties of gum base,the technology of chewing gum and the technology of degradability of gum base. The results were as follows:It was showed the optimal conditions for acid treatment and enzymatic treatment were confirmed through single factor and orthogonal design experiments.The results showed that the optimum conditions of acid treatment were acid 2%,time 30min,temperature 40℃,that the optimum conditions enzymatic treatment were enzymatic 0.2%,pH 6,temperature 40℃,time 25min.The value of elasticity was 0.734 by acid treatment and 0.885 by enzymatic treatment.So enzymatic treatment was better than acid treatment,and it was confirmed that the treatment of gum base ought to choose enzymatic treatment.It was comformed that the gum base was a non-Newton fluid by studied the change of pH,temperature, elasticizer,shearing on the viscosity of gum base.The results show that the amount of wheat gluten, zeins,emulsifier was 60%,15%,8% by studied the effects of wheat gluten, zeins, emulsifier on the mechanical capacity of gum base.It was confirmed that the extraction technology of bamboo leaves,the technology of chewing gum by single factor and orthogonal design experiments. It showed that optimum conditions were percent of ethanol volume 10%, microwave time 5min, ratio between solvent and material 12:1. The extraction ration was 7.74% at this condition. The optimum aging conditions were the relative humidity 50%,tempreture 25℃,dry time 10h.The optimum directions for bamboo shoot dissolvable chewing gum were gum base 35%,bamboo leaves extraction content was 25%, maltose syrup 20%, saccharose 15%, sorbotol 4%, citric acid 0.4%.Experimengts of microorgamism eroding and soil bury indicate that the gum base of bamboo shoot degradable chewing gum is a kind of biodegradable material,that the degradable speed of bamboo shoot degradable chewing gum was more quickly than "Doublemint"chewing gum and butylrubber chewing gumAs discussed above,bamboo shoot degradable chewing gum not only solved the environmental problem but also added the health component to effectively keep mouth odor fresh with the technologies.So the chewing gum is worth to be developed as a production.
