The method and effect of modified atmosphere storage with low-density polyethylene (LDPE) bags for bamboo shoot was studied in this experiment. LDPE of different thickness (0.02,0.03 and 0.04 mm) was selected as the bag material. The bamboo shoots were packaged with different amounts (0.25,0.50 and 0.75 kg for each bag) and then preserved at 2℃. The results showed that bags with single-layer thickness of 0.03mm and the packaging amount of 0.75 kg are the best choices, and can gain the best application. Bamboo shoots packaged by LDPE bags had lower weight loss and browning rate. Their crude fiber and lignin content and peroxidase(POD) and phenylalnine ammonialyase(PAL) activity are significantly lower than the non-packaged bamboo shoots', while their polyphenol oxidase(PPO) activity was significantly higher. LDPE bags packaged bamboo shoots'lignification and aging is well below the non-packaged bamboo shoots, LDPE bags for bamboo shoots at low-temperature obtained good effects.The effects of ultra-high pressure (UHP) treatments on sensory and nutritional qualities of bamboo shoots and some critical quality-related enzymes were studied in order to apply the technique to storage and processing of bamboo shoots. Pressures of 200 MPa,400 MPa and 600 MPa combined with the processing time of 10 min and 20 min were taken as the experiment conditions. The results showed that UHP treatments yielded a slight negative impact on the W.I. of the bamboo shoots and the content of soluble protein, Peroxidase showed strong resistance to high pressure. However, phenylalnine ammonialyase and polyphenol oxidase decreased significantly with pressure increasing, while cellulase was activated. In conclusion,600 MPa-10 min treatments can inhibit synthesis of lignin and cellulose and enzymatic browning and was considered as the relatively suitabale condition in this experiment.
