In China, Chinese cooking appliance is one of the necessary appliances in the hotels and restaurants. The Chinese cooking appliance is made and designed according to Chinese cooking ways. Its main features including high heat load, high heat intensity of loading vessel bottom. However, its efficiency is not pretty high, and it generates a lot of smokes and toxic gases. In order to improve the safety, efficiency and eco-friendship of Chinese cooking appliance, various new fashions of safe, energy saving and eco-friendly Chinese cooking appliances are emerging; meanwhile, these new types meet users'need for different functions of Chinese cooking appliance. It is clear that these different types of Chinese cooking appliances represent distinctive properties. Because of unique application function and structure feature of Chinese cooking appliance, few researches were done yet. So, the main objective of this paper is to understand various properties of premixed and air-blasting Chinese cooking appliance deeply, the author applied heat transfer theory, combustion theory and mathematic theories to study and analyze this burner.Firstly, through the experiment on flame stability, the author drew the curves of combustion characteristics of premixed and air-blasting Chinese cooking appliance, obtained the zone of stable combustion and found the detects of this burner on combustion stability. And then, through the orthogonal experiments on the thermal properties, the author got the influential degree of influential factors-gas supply pressure, primary aeration and loading height, and their orthogonal functions on the assessment parameters of thermal properties-concentrations of CO , NOx and O2 , thermal efficiencyηand fume temperature t f, and discussed the reasons of why these influential factors and their orthogonal functions affected the assessment parameters of thermal properties; and through the testing experiments on the thermal properties, the author discussed the different changing disciplines of the assessment parameters of thermal properties following the change of gas supply pressure, primary aeration and loading height, when with or without loading vessel, and discussed what affects the assessment parameters of thermal properties; and finally studied the properties of flame temperature of this burner, with different gas supply pressure and measuring points without loading vessel.On the base of above studies and analysis, the author raised a project on remodeling the mixing chamber of this burner. Through the comparison between the datum of combustion stability, thermal properties and properties of flame temperature before and after the mixing chamber was remodeled, the author wanted to study the effect of this remodeled mixing chamber on various properties of this burner, and obtained the changing disciplines of various properties after the mixing chamber was remodeled, and finally realized the aim of providing design ideas for the further optimization of premixed and air-blasting Chinese cooking appliance.
