In this paper,the Kexin No.1 and Shepody were used as materials.The objective of this study was to investigate the general regulation of low reducing sugar formation in potato tuber by the observation in field and analysis in lab.The experimental results indicated:with the growth of plant,the reducing sugar in potato tuber showed a decreasing tendency.Between the Kexin No.1 and Shepody,the phosphorus in different organs ,the potassium in tuber and the nitrogen in stem were the strikingly adverse relation to the reducing sugar in tuber.Therefore,the phosphorus in different organs,potassium in tuberthe nitrogen in stem could be regarded as the significantly physiological indexes for the type breeding and the quality prediction of potato frying food processing.The reducing sugar in leaf and in stem were adverse relation to the one in tuber before the period of tuber increasement and were right relation after the period;The nitrogen in leaf and in stem were adverse relation to the reducing sugar in tuber and the nitrogen in tuber was right relation to the reducing sugar in tuber....
