Yeast (JM) and its culture were studied. Yeast culture was prepared by liquid-cultivation and solid-fermentation. CPU was 3xl09/g in Yeast culture. In yeast culture, activity of 3 -1,4 glucanase was 2517.60 U/g; activity of total cellulase was 170.49 U/g; activity of hemicellulase (xylanase) was 2092.69 U/g; activity of neutral proteinase was 205.13 U/g. CP was increased by 13.30%~18.54%, total amino acid was increased by 8.57%-11.69% in different culture medium.The effect of Yeast culture on rumen fermentation and production performance of sheep that were grazing and supplementary feeding was studied, 10 g Yeast culture was added in ration of each sheep per day, test period was 30 days. Average daily gain of sheep of treatment group was increased 11.1% than that of control group(P > 0.05). Apparent digestibility of DM of treatment group dietary was increased. Apparent digestibility of CP of treatment group dietary was increased by26.97% (P0.05), apparent digestibility of NDF, ADF and hemicellulose of treatment group dietary was increased by 4.58%, 7.26% and 2.86% respectively. Concentration of NH3-N was decreased, significantly (P0.05), number of rumen protozoan increased after feeding Yeast culture. Concentration of TVFA was increased. Acetic acid/ propionic acid was increased. Serum amino acid and total protein were increased. Rumen pH was steady.
