The technology of quality inspection and classification of farm produce is becoming more and more important because of the rapid progress of agriculture's modernization. This paper introduces the technology and method of apple's nondestructive inspection and classification based on dielectric property. We discuss the relationship of apple's dielectric property and its inner quality, analyze sample's frequency character of dielectric property parameters and confirm the inspected parameters with the testing system, which consists of homemade model machine of nondestructive inspection, intelligent LCR measure apparatus and flat copper electrodes. It validates the rationality of inspection parameters' selection by analysis apple's biochemistry property measured destructively and dielectric property measured nondestructively.Gray system theory is applied to apple's nondestructive inspection and classification. The paper introduces the basic concept, theory, method and mathematics characterization of gray system, analyses the combination point of gray system theory and the research of apple's nondestructive inspection, and points out that dielectric property parameter of different apples cannot expressed by formula and model simply and that apple's inner quality is a gray system, which is fit to research by gray system theory.At last, the paper introduces the gray method to evaluate apple's quality, which includes the mathematics model of this method,the establishment of standard evaluation sequence and pretreatment method of original data, and gives examples of gray integrated estimation. It can be concluded by contrast and analysis that gray method is convenient to compute and makes full use of the information. Its result is evident and credible, and can reflect the complicated inner quality of fruit. It is a better way to evaluate fruit's quality and provides a theoretical basis and arithmetic for quality evaluation to classify automatically.
