The studies were carried out in Wheat Lab of Northeast agricultural university in Harbin from 2001 to 2002. The formation and dynamic accumulation of total grain starch and its compositions, and its relationships to main grain quality characters, as well as, effects of nitrogen and sulphur on the grain starch accumulation and main grain quality characters were studied by the different cultivars differing in quality under the condition of different amount of nitrogen and sulphur applications. The results showed:The dynamic accumulation of total grain starch and amylopectin content in the same cultivar was the same basically in the different amount of sulphur application under the condition of same N-fertilizer treatment. The accumulation of total grain starch and amylopectin appeared about 5th day post anthesis. The initial amount of total grain starch and amylopectin accumulation was different in the different amount of sulphur application. With the development of grain filling,the dynamic accumulation of total grain starch and amylopectin increased generally,and the final amount of total grain starch and amylopectin accumulation was different in the different amount of sulphur application under the condition of same N-fertilizer treatment. Applying sulphur can regulate the accumulation of total grain starch content, but the regulation was related to applying nitrogen amount. The highest content of total grain starch in the same cultivar in the different amount of N-fertilizer application demanded the different amount of sulphur application. But the higher content of total grain starch in all cultivars can be obtained in the certain amount of sulphur application under the condition of urea 30kg/hm2 or 60 kg/hm2.The applying sulphur under the condition of urea 30kg/hm2 was beneficial to the increase of total grain starch content in the cultivars with the high grain protein content and low yield, but it was not beneficial to the increase of total grain starch content in the cultivars with the low grain protein content and high yield. Total grain starch content in the cultivars with the high grain protein content and high yield was situated between the total grain starch content in two types of cultivars above. The highest total grain starch content in the cultivars differing in quality can be obtained under the condition of lower amount of nitrogen and sulphur application. It was very beneficial to the total grain starch content of the cultivars with the low grain protein content and high yield under the condition of urea 128 kg/hm2 and sulphur 25 kg/hm2.The effect of the different amount of nitrogen application in the same sulphur treatment on the dynamic accumulation trend of total grain starch was the same basically, but the effect of the amount of nitrogen application on the initial and final accumulation amount of total grain content was different. It was not beneficial to the accumulation of total grain starch under the condition of high amount of nitrogen application in the same sulphur treatment. The total grain starch content can be enhanced under the condition of the low amount of nitrogen application. But the accumulation of total grain starch is on the basic of amount of nitrogen application. The accumulation of grain amylose and amylopectin were different. The initial accumulation of grain amylope was later than the accumulation of total grain starch and amylopectin in spring wheat differing in quality. Amylose aggregation was found about 10th ~15th day post anthesis, and its accumulation rate is very high, but its final accumulation amount is lower than that of grain amylopectin. The dynamic accumulation trend of amylope in the same cultivar was same mainly in the different amount of sulphur under the condition of the same nitrogen application. The dynamic accumulation of amylope in all cultivars increased during the period of grain filling, but the initial and final accumulation amount were different significantly.
