The effects of hypobaric condition (20.3kPa, 50.7kPa, 101.3kPa) on physiological and biochemical changes of Dajiubao peach and Lizao jujube were studied.The results showed that Dajiubao peach is of climacteric type fruit, Lizao jujube is of non-climacteric type, hypobaric condition could not change the respiratory patterns of the Dajiubao peach and Lizao jujube . Hypobaric condition slowed down respiration, and delayed two respiratory peaks of the Dajiubao peach. During stqrage, H2O2 and O--2 content increased slowly during the early and middle stages of storage, but during the late stage of storage they increased rapidly. The functions of membrane lipid peroxidation were enhanced and caused the destruction of membrane structure, accumulation of MDA content and increase of relative conductivity. Hypobaric condition inhibited the accumulations of H2O2 and O--2 content. The O-2 and H2O2 content all positively correlated with MDA content and relative conductivity extremely significantly. Hypobaric storage reduced the accumulation of MDA content and the relative conductivity.Under hypobaric condition, SOD activities of Dajiubao peach and Lizao jujube were strong, the SOD activity of Lizao jujube was delayed; POD activities were inhibited, the first peak of POD activity of Dajiubao peach retarded; the activity of CAT of Dajiubao peach was suppressed, but maintained activity of CAT of Lizao jujube.The losses of Vc content were inhibited, the changes of colure were markedly slowed down, the fresh rates were remarkably strong, under the hypobaric condition. Hypobaric storage delayed the progress of senescence, enhance the storage life.
