Dihydromyricetin have a variety of beneficial physiological funtions, and exists in Ampelopsis grossedentata at a relatively high concentration. Thus it has a great potential to be developed as drugs, food additives, functional and health-care food products etc. In this work, the application of dihydromyricetin as a food antioxidant and the protective effect of dihydromyricetin in oxidative damage on cells and blood-related materials were studied.The antioxidative ability of tertiary butylhydroquinone (TBHQ), dihydromyricetin and V_c in the oxidation induced by pyrogallol red was compared. The antioxidant ability of dihydromyricetin and TBHQ in the oxidation of lipid and pastry was also studied. The results showed that, the antioxidant ability of dihydromyricetin was better than TBHQ but close to Vc in the the oxidation induced by pyrogallol red, and similar to TBHQ in the oxidation of lipid and pastry. Moreover, dihydromyricetin possessed a good stability within one year.While erthrocyte, hemoglobin and cells were under oxidative damage induced by the hydrogen peroxide (H2O2), glucose oxidase, plumbum or tert-butyl hydroperoxide (TBHP) on different concentrations of dihydromyricetin , hemolysis rate of erythrocyte and methemoglobin. converted from hemoglobin was estimated by ultraviolet-visibleabsorption spectroscopy, malondialdehyde (MDA) from erythrocyte was measured by thiobarbituric acid (TBA) colorimetry, the cellular viability of cells was examined using MTT (3-(4, 5-dimethylthiazol-2-yl)- 2, 5-diphenyl tetrazolium bromide) assay, Whereas the apoptosis was examined by agarose electrophoresis method. The hemolysis rate of erythrocyte, the apotosis level of Jurkat cell, methemoglobin and MDA was found reduced while the concentration of dihydromyricetin were increased. However, cellular viability of Hela and 3T3 cells were found increased paralleling with the increased concentration of dihydromyricetin.Our data suggested strongly that dihydromyricetin has favorable anti-oxidative effect, and is worthy of further research and of great value for exploration and utilization.
