The giant embryo rice(ge-rice) is a special rice with high nutritive and function , the embryo weight of giant embryo rice is increased by 2-3 times than that of common rice., and it contains rich nutrition. In this study, nutrition characters, anatomical charaters of embryo and germination of giant embryo rice were studied. The main results were as following:1. Compared with its original rice, ge-rice has an increase in the contents of its brown proteins, fats, crude fibre and ashs, respectively, by 11.14%, 106.09%, 42.21% and 10.17%. The average contents of mineral elements Ca, Fe,Zn, Mn, Mg, P, K, Na, Cd and vitamin VB1, VB2, VB3, VE, VM are higher than that of ck. The contents of GABA(γ-aminobutyric acid) in ge-rice is showed an increase of 286.58%. The total amino acid increase by 4.77% to 37.09%, and most of the contents of 17 kinds of amino acids also have the varying degree increases. The amino acidscore of the ge-rice and ck are all most the same.2. The greatest growing speed of embryo of ge-rice appeared during the six day to the nine day after flower, and the growing speed of ge-rice is higher than that of the wild type; The embryo size of ge-rice, specially the size of scutellum are larger than ck. The ge-rice have about 2.09 times length and 1.90 times width cells of scutellum than ck; The number of cells in embryo of ge-rice is comparable to that of wide type embryo, the enlargement of embryo is exclusively due to the enlargement of scutellum cells.3. The germination rate of ge-rice is lower than that of corresponding rice, as well as the germination duration is longer, and the germination is not uniform. The germination rate is increasing during 9d to 21d after flowering, and then decreasing. Compared with the corresponding rice, the germination rate of ge-rice decreased quickly when it stored in normal temperature conditions. The germination rate of ge-rice treated by GA3 was improved, and the suitable treated dosage depended on different varieties.
