The objectives of this study were to evaluate growth, slaughter performance, histological characteristics and physicochemical properties of Lanzhou Fat-tailed Sheep. It measured weight, body size indicators, slaughter indicators, muscle fiber diameter, muscle fiber density, pH, meat color, marbling, water loss rate, cooked meat and the content of moisture, protein, ash and fat, and analyzed the various traits mutual relations.1,Growth and development of Lanzhou Fat-tailed SheepGrowth rate of Lanzhou Fat-tailed Sheep were fast before 3-month-old. They grew slow from 3-month-old to 10-month-old. Male sheep grew faster than female sheep from 1-month-old to 10-month-old.2,Slaughter CharacteristicsThe first three Lanzhou Fat-tailed Sheep whose dressing percentage were higher were 1.5 years old,2 years and 11-month-old Lanzhou Fat-tailed Sheep. The first three Lanzhou Fat-tailed Sheep whose rate of tail fat in carcass were higher were 1.5 years old,11-month-old and 5-month-old Lanzhou Fat-tailed Sheep. The first three Lanzhou Fat-tailed Sheep whose rate of skin in weight were lower were 2 years old,1 year and 1.5 years old sheep. Slaughter characteristics of 1.5 years old Lanzhou Fat-tailed Sheep was better than others. Essential amino acids:Non-essential amino acids was 0.87:1. Content of Fe, Mn,Zn, Cu, Mg, Ca were 1235.55 mg/100g,14.22 mg/100g,1219.38 mg/100g,11.78 mg/100g,7865.10 mg/100g,124.59 mg/100g(in DM).3,Meat QualityAverage water content of Lanzhou Fat-tailed Sheep was 67.12%. Content in DM of protein, fat and ash were 4.26%,78.01%,16.26%. Average pH1, pH24, marbling, meat color, GR value, Loin eye area, shear force were 6.80,6.28,3.06,3.53,1.15 cm,8.65 cm2,5.62kg.f. Content of ASP and GLU were 13.51g/100g,7.71g/100g. First limiting amino acid of Lanzhou Fat-tailed Sheep was TRP. Content of Mg was the highest level. Content of Fe and Zn were the second. Content of Cu was the lowest level. The mean diameter of longissimus muscle fiber was 2.74μm, and the mean density of longissimus muscle fibers were 2276.78N/mm2. The mean diameter of arm triceps fiber was 2.94μm, and the mean density of arm triceps fiber was 1700.13N/mm2. The mean diameter of biceps femoris was 2.52μm, and the mean density of biceps femoris was 2713.43N/mm2. Arm triceps fiber had the thickest fiber diameter and the most sparse muscle fiber density. Biceps femoris had the smallest fiber diameter and the dense muscle fiber density. Shear force of biceps femoris, arm triceps and longissimus muscle were 4.47kg.f,6.80kg.f,6.23kg.f.
