Turpan black sheep and Altay sheep in Xinjiang as the experimental object in this research, the correlation of muscle fiber characteristics and meat production was analyses, made frozen tissue slices of different parts of the skeletal muscle by using freezing method, the measurement of cross sectional area of muscle fiber in different parts of the skeletal muscle and the type of muscle fiber were analyzed respectively by taking H E staining and ATP enzyme staining methods, and also the measurement of muscle fiber cross-sectional area and typing of muscle fiber type were taken by utilizing of image processing system, determinate the number of different types of muscle fibers, cross-sectional area and diameter, different fiber characteristics and meat quality,muscle fiber characteristics and meat quality of Turpan black sheep and Altay sheep were analyzed by using SPSS17.0 software. In order to provide a basis for the early selection of sheep.1.Study on the relationship between cross-sectional area of different parts of the skeletal muscle fiber with weight of meat in two breeds of sheepThe longissimu doris musclee and the meat weight of unit four biceps in Turpan black sheep was significantly higher than that of the triceps(P<0.01); The cross sectional area of muscle fiber of the longissimu doris muscle and the meat weight of this part in Turpan black sheep was significant positive correlation(P<0.01); the cross sectional area of muscle fiber of brachial triceps and unit four biceps with the meat weight of this part was significant positive correlation(P<0.05). The meat weight of the longissimu doris musclee in Altay sheep was significantly higher than brachial triceps(P<0.05); the cross sectional area of muscle fiber of the back longest fiber and the meat weight of this part was significantly positive correlation(P<0.01); the muscle fiber area of brachial triceps and unit four biceps were significantly correlated with the meat weight of this part(P<0.05). It showed that the cross-sectional area of muscle fiber is significant than meat production,the more area of muscle fiber, the more meat production.2.Study on the relationship between muscle fiber histological characteristics of different parts of the skeletal muscle with meat quality in two breeds of sheepThe number of muscle fiber of the longissimu doris musclee type Ⅱb and the p H value in Turpan black sheep had a significant negative correlation(P<0.05); the muscle fiber diameter of type I and moisture content has a significant negative correlation(P<0.05); the muscle fiber cross-sectional area of type I and fat content in muscle has a significant negative correlation(P<0.05); the cross-sectional area of muscle fiber of type Ⅱb and shear force has a significant negative correlation(P<0.01); the muscle fiber diameter of type I in Brachial triceps and shear force has a significant negative correlation(P<0.05); the muscle fiber diameter of type Ⅱb and shear force has a significant negative correlation(P<0.01); the cross-sectional area of type Ⅱb and moisture content has a significant negative correlation(P<0.05);a significant negative correlation with ash content(P<0.05); the number of muscle fiber of type Ⅱb in Brachial triceps and shear force has a significant negative correlation(P<0.05); the muscle fiber diameter of type Ⅱb and fat content in muscle has a significant negative correlation(P<0.05).The number of muscle fiber of type Ⅱb of longissimu doris musclee in Altay sheep and p H value has a significant negative correlation(P<0.05); the diameter of muscle fiber of type Ⅱb and shearing force has a significant negative correlation(P<0.01); the cross-sectional area of type Ⅱb and moisture content has a significant positive correlation(P<0.05); the number of muscle fiber of type Ⅱb of brachial triceps and cross-sectional area had a significant positive correlation with moisture content(P<0.05); the number of muscle fiber of type I of unit four biceps and shear force has a significant negative correlation(P<0.05); the number of muscle fiber of type Ⅱb and shear force has a significant positive correlation(P<0.01); the muscle fiber diameter of type Ⅱb and ash content has a significant positive correlation(P<0.05). The results showed that the muscle fiber contents of type I is higher,the shear force of muscle is less, the meat is fine and tender; the more muscle fiber contents of type Ⅱb,the more shear force, but the poor meat tenderness.The number of muscle fiber of type Ⅱb has more effect on the p H value than type I.3.The comparison between longissimu doris musclee quality with muscle fiber characteristics in Turpan black sheep and Altay sheepThe meat quality of the Longissimu doris musclee has a significant difference among the two species, the shear force of the longissimu doris musclee and moisture content in Altay sheep were significant big than Turpan black sheep(P<0.05). The fat content in muscle of Turpan black sheep significantly higher than Altay sheep(P<0.05); p H value and ash content has no significant different among the two species(P>0.05).The characteristics of the Longissimu doris musclee fiber has a significant difference among the two species, and the number of type I muscle fibers contained in Turpan black sheep was significantly higher than Altay sheep(P<0.01), the number of type Ⅱb muscle fibers in Altay sheep was significantly higher than Turpan black sheep(P<0.05); the cross-sectional area of muscle fiber in type I in Turpan black sheep has significantly smaller than Altay sheep(P<0.01). The diameter of muscle fiber of type I in Altay sheep is significantly higher than Turpan black sheep(P<0.01), but the diameter of muscle fiber of type Ⅱb is significantly higher than Turpan black sheep(P<0.05). The muscle fiber diameter of the longissimu doris musclee in Turpan black sheep is smaller than Altay sheep, the fat content in muscle is bigger than Altay sheep, showed that the tenderness of Longissimu doris musclee in Turpan black sheep is better than Altay sheep.
