In this thesis, taking Hydrangea macrophylla as the experiment material, the technical conditions of extraction and identification and the stability of red pigments were studied, respectively, the possible molecular structure of the pigment was discussed. According to the experimentation result, chemistry method was adopted in order to protect the dried red flower stability.The research of extraction technology of red pigments:the processed were optimized using ratio of material/extractor, temperature, time as factors with extraction solvents by orthogonal test L9(34). From the result of the orthogonal experiment, we can know that the influencing effects of each factor was A>B>D>C. It means that the effect of the ratio of material/extractor was best, the others were lower than its. Making certain the optimum technical conditions of extraction was A3B3C1D2, material/extractor ratio 1:40, extraction temperature 80℃, the extraction solvent was 80% ethanol and hydrochloric acid solvent, extraction time 2 hours.The research of physicochemical properties:scanning the spectrum 800-200nm for Hydrangea Macrophylla red pigment, confirming the maximum absorption band was 541nm. The organic acid can enhance the color of the solvent. The solvent color was changed and then faded, pH≥5, along with the pH value reincreasing, the solvent was changed with deposition at last. The red pigments of Hydrangea Macrophylla has good resistance to heat but sensitive to light. Reductant-oxidant destroyed the pigment seriously. The carbohydrate and the organic acid can enhance the color of the solvent. After joining the metal ion Na+,K+,Ca2+,Mg2+,Zn2+,Mn2+, the solvent absorbency was not too distinctness. The metal ion Al3+,Pb2+,Fe2+ had effect of adding the solvent's colour, while the metal ion Cu2+ and Fe3+destroyed the pigment and they were not suitable to join in the solvent.The pigment identification:The Color Reaction,TLC,UV-VIS Spectrum and the high pressure liquid chromatography-mass spectrometry (LC-MS) analyses were used to isolate anthocyanins and to determinate the molecular structure. The result showed that the sample may be delphinium and glucose getting rid of H2O. At last confirming the pigment was delphinidin-3-O-glucoside, the molecular formula is C21H21O12.The research of application:The best color protecting solvent:7% sucrose+7% citric acid+Al3+, the destructive test result showed that the best color protecting solvent can protect the color of red flower petals, and then the dry pressed flowers were used in mading production.
