Songcheng gax\ic(Allium sativum L) was put in cold storage at -2.5℃±0.5℃, RH 75%, every fifteen days from July 1st to September 15, in 2004, It was studied that the effect of different starting cold storage date on the ratio of bud/glove, the ratio of weight loss, the contents of allicin, crude fiber, vitamin C, soluble sugar, soluble protein. The changes of inner bud of two group garlic had been studied from January 1st to April 1st, in 2005 .The garlic was taken out from the storage every one month, then one group placed at nature temperature outdoors, and the other in artificial climate box at 16℃ ±1℃ and RH75%. Songcheng garlic and Cangshan garlic were put in refrigerator at RH80%, and at 0℃ ±1℃, -3℃ ±1℃ and -5℃ ±1℃, respectively, the changes of inner bud had been studied . Results showed that:l)The inner bud growth of garlic could be inhibited efficiently in cold storage, and the inhibition varied from different starting cold storage date at -2. 5℃±0. 5℃, when garlic was put in storage for 270d on July 1st and July 15th, for 240d on August 1st and August 15th, all the ratio of bud/glove was less than 0.33; when garlic was put in storage on September 1st and September 15th, the ratio of bud/glove was more than 0.5,and the commercial value to export was lost, the inner bud growth could not be inhibited completely, and became more slowly when the garlic was put in clod storage.2)garlic kept weight loss by inches as storage time extended in different starting cold storage date, the earlier garlic was put in storage, the less the weight loss; the increase in the crude fiber content could be hold back effectively in contrast with CK, there were no significant differences among different starting cold storage date. The allicin content increased slightly with the starting cold storage date delayed and storage time extended; the soluble sugar content kept invariableness in different starting cold storage date and storage period; the soluble protein content increased various degrees from different starting cold storage date; vitamin C content remained constant in the dormant period ,increased slightly free from dormancy.2) When garlic was taken out from cold storage, the growth speed of Songcheng garlic inner bud related to the time of cold storage; at the same out of storage date, the earlier garlic was put in storage, the less speed the inner bud grew, the longer time when the ratio of...
