'Youhou'(Diospyros kaki. L.cv.'Youhou') and'Jiro'(Diospyros kaki. L.cv.'Jiro') sweet persimmon, mainly grown in Shaanxi province, were chosen to investigate the effect of 500 nL·L-1 1-MCP on postharvest respiration, ethylene production, fruit quality and protein patterns both at room temperature and at 0℃. The influence of different veritiey and maturities on the effect of 1-MCP was also investigated the postharvest Characteristics of sweet persimmon and the physiological mechanism in which 1-MCP delays the senescence of sweet persimmon were also probed. The main results acquired were as follows:(1) In this study,the change of flesh firmness of sweet persimmon during storage at room temperature were differentiated two stages, softening startup at early storage and fast softening at later storage. And the time of fast softening mainly happened after 20-day.1-MCP treatment obviously slow fruit softening process. Though low temperature can significant retard the fruit softening and prolong the shelf life by inhibiting the respiration and ethylene (C2H4) production, the fruit was totally stored for 30, 60, 90 day at 0℃softened and lost its edible quality at the end of 7-day shelf life before.1-MCP treatment significantly inhibited the persimmon fruit softening both during storage time and during the subsequent 7-day shelf life. The flesh of sweet persimmon treated with 1-MCP still kept'crispy'at the end of shelf life. Moreover the difference in the effect of 1-MCP on fruit softening was found between varieties and between maturities. Inhibition of 1-MCP on softening of'Youhou'was greater than on that of'Jiro', and the inhibition on I was greater than harvesting II.(2) At room temperature, the fruit didn't show the typical respiration and ethylene peak and 1-MCP inhibited the respiration and ethylene production of sweet persimmon but didn't change the trend. However the respiration and ethylene product rate appeared double peaks at 0℃.The effect of 1-MCP on ethylene production has different impacts on variety and maturity at 0℃, especially in the later storage time. The ethylene production of'Youhou'persimmon was reduced by 1-MCP treatment. However the ethylene product rate of'Jiro'and'Youhou'picking II treated with 1-MCP was higher than non-treatment at the later of storage...
