For human and animals, iodine (I) is essential to health and forms an important constituent of the thyroid hormones. These hormones play a fundamental biological role controlling growth and development. IDD has become an global sanitation problem. Inorganic iodine could be dangerous to human and even produces toxicity. Iodine will have wide edible valuation only when it is transformed into biological active organic iodine.With some kinds of farmlands vegetables chosen as research objects, distribution mechanism of iodine in vegetable is investigated on different fertilization methods (spray fertilization and soil fertilization). The experiments are designed to apply spectrophotometer to measure the iodine content of vegetables, using TEM and X-Ray EDS to observe the distribution of iodine in the vegetables cell and the existence of AgI and applying the ICP-MS to find out the distribution mechanism of iodine in vegetable cells from a view of both macroscopic and microcosmic points. As foundation to the further study on vegetable's rich effect on iodine, the research could help find out a new method in curing IDD.The conclusions obtained are stated as follows:Farmland vegetables absorb iodine apparently. The iodine concentration of eatable of fruity vegetables and leafy vegetable is 1 mg/kg (dry weight) and above 1 mg/kg (wet weight), respectively. Eaten about 150g iodine-rich vegetables per day will meet the daily iodine need (150ug). The content of iodine of farmland vegetable leaves is more than that in farmland vegetable fructifications, so the capacity of iodine-rich of leafy vegetables is better than fruity vegetables. Leafy vegetables can be chosen as iodine-rich vegetables. From the microcosmic distribution of iodine in vegetable cells by using TEM and X-Ray EDS , it can be found that iodine mainly enriched in cell organ in leaf tissue and enriched in cell wall and fiber tissue in root tissue.In conclusion, Farmland vegetables absorb iodine apparently. It's feasible to prevent and cure IDD with iodine-rich vegetables. So it is of promising applications to cultivate iodine-rich vegetables for biofortification to prevent IDD.
