Longjing tea is the first famous tea in Chinese traditional teas,its color is green,its aroma is great,its taste is sweet and its shape is beautiful,for those reasons,Longjing tea is also wildly known in the whole world.The aroma of Longjing tea is special,it was said that the sweet aroma is alike the orchid,the fragrance is faint but not stuffy. In this thesis,the characteristic aroma components of grades and producing areas were extracted and analyzed basing on the existing literatures,and the combination of SPME-GC-MS.The results were as followed:1.The characteristic aroma components of Dafo Longjing tea in grades.48 kinds of aroma components were extracted,separated and identified from 6 grades Dafo Longjing tea.In the 48 components,furan,2-pentyl-,linalool,nonanal,cis-3-hexenyl butyrate,methyl salicylate,trans-2-hexenyl butyrate,decanal,cis-3-hexenyl isovalerate,trans-geraniol,cis-3-hexenyl hexanoate,trans-2-hexenyl hexanoate and cis-Jasmone,were the main of the 6 grades Dafo Longjing tea,which were very important to the tea quality.The component of variance showed that cis-linalool oxide,linalool,cis-3-hexenyl butyrate,trans-geraniol,cedrene and beta-Famesene were responsible to the different of the grades.2.The characteristic aroma components of Xihu Longjing tea in grades.43 kinds of aroma components were extracted,separated and identified from 5 grades Xihu Longjing tea.In the 43 components,furan,2-pentyl-,linalool,nonanal,cis-3-hexenyl butyrate,methyl Salicylate,dodecane,trans-geraniol,cis-3-hexenyl hexanoate,trans-2-hexenyl hexanoate and cis-Jasmone were the main of the 6 grades Dafo Longjing tea,which were very important to the tea quality.The component of variance showed that furan,2-pentyl-,linalool,cis-linalool oxide,cis-3-Hexenyl isovalerate,cis-3-hexenyl butyrate,methyl salicylate,hexanoic acid,cadinene and farnesene were responsible to the different of the grades.3.The characteristic aroma components of Qiantang Longjing tea in producing area. 47 kinds of aroma components were extracted,separated and identified from 3 producing areas Qiantang Longjing tea.In the 47 components,furan,linalool,nonanal, cis-3-hexenyl butyrate,methyl salicylate,cis-3-Hexenyl isovalerate,trans-geraniol, cis-3-hexenyl hexanoate,trans-2-hexenyl hexanoate,cis-Jasmone and nerolidol were the main of the 6 grades Dafo Longjing tea.The component of variance showed that furan,2-pentyl-,cis-3-hexenyl butyrate and trans-2-hexenyl hexanoate were responsible to the different of the producing area,and beta-Ionene, trans-geranylacetone and Naphthalene,2-methyl- were responsible to the different of the grades.4.The characteristic aroma components of Xihu Longjing,Yuezhou Longjing and Qiantang Longjing tea.Furan,2-pentyl-,linalool,nonanal,cis-3-hexenyl hexanoate,trans-2-hexenyl hexanoate,hexadecane,beta-Famesene,nerolidol and trans-geranylacetone were responsible to the different of the producing areas. By the research of the characteristic aroma components of Longjing tea of grades and producing areas in this paper,the results could be used in the quality evaluation of Longjing tea and the protection project of Longjing tea original producing area.
