The protein and starch are the most important substances in wheat kernels and flour,the content,components and diversity not only effect on the nutrition and machining quality but also instruct the wheat quality improvement.The distribution and diversity of the protein and starch components of the comer stone breeding parents and commercialized wheat in Chongqing were analyzed in this paper in order to provided reference for the genetic improvement of wheat quality。1.The protein content of the 35 corner stone breeding parents and commercialized wheat in Chongqing were studied.The average protein content was 15.34%,ranged from 12.26%to 20.18%; among 35 corner stone breeding parents,27 corner stone breeding parents reached the protein content standard of special strong gluten wheat,3 breeding parents reached the standard of special medium gluten wheat,5 breeding parents reached the standard of special weak gluten wheat.The average protein content of the 7 commercialized varieties is 13.31%.2.The protein components of 35 Chongqing corner stone breeding parents and commercialized wheat were studied.The order of the variant coefficient of protein components is: the insoluble protein content>albumin content>gliadin content>glutenin content>globulin content; the content distribution of albumin and gliadin tended to normal distribution,glutenin and insoluble protein tended to norble distribution of high content.The protein components content of 7 commercialized varieties were lower than the content of the comer stone breeding parents,which implied that the quality of Chongqing wheat can be improved.3.The glutenin polymer content of 35 Chongqing comer stone breeding parents were studied.The average glutenin macro-ploymer(GMP)content of 35 Chongqing comer stone breeding parents was 7.12%,ranged from 5.41%to 8.82%;the average propotion of GMP in the protein was 46.52%,ranged from 40.89%to 52.67%;the average content of the soluble glutenin protein(SGP)was 1.61%,which proportion in the protein was 10.58%;the average proportion of the total glutenin protein(TGP)in the protein was 57%,ranged from 49.94%to 64.01%.The variant coefficient of SGP content and the proportion of SGP in the protein were bigger than that of the TGP/pr and GMP/TGP.We can select strong gluten wheat from those of low SGP content.The distribution of GP to 7 Chongqing commercialized wheats were also studied.4.The HMW-GS compositions in 35 Chongqing corner stone breeding parents and commercialized wheat were analyzed by SDS-PAGE.There have 15 subunits and 18 subunit composition patterns in the 35 corner stone breeding parents.The types of the subunits were 3 (1,2*,null)in Glu-A1,9(7+8,7+9,7,22,6+8,14+15,17+18,20,8)in Glu-B1,3(2+12,5+10,4+12)in Glu-D1,the frequency of the good quality subunit "5+10" is 57.14%;The prevalent subunit composition were(null,7+8,2+12),(null,7,5+10);The mean quality score of these breeding parents was 6.41,ranged from 4 to 10.Six subunit composition patterns were identified in the seven commercialized wheat in Chongqing,their average quality score was 6.57,higher than that of the corner stone breeding parents.5.The LMW-GS compositions in 35 Chongqing corner stone breeding parents and commercialized wheat were analyzed by SDS-PAGE.There have 16 subunits and 32 subunit composition patterns in the 35 corner stone breeding parents;The types of the subunits were 4(a,b, d,f)in Glu-A3,7(a,c,d,e,f,g,h)in Glu-B 3,5(a,b,c,d,e)in Glu-D3.Nine subunits and six subunit composition patterns were identified in the 7 commercialized varieties of Chongqing wheat.6.The starch components of 35 Chongqing corner stone breeding parents and commercialized wheat were studied.For chongqing corner stone breeding parents,the variant coefficient of the amylose content and the proportion of amylose and amylopection were bigger than those of the amylopection and starch content;the average amylose content of the corner stone breeding parents was 19.08%,the distribution of the amylase content of the breeding parents tended to norml distribution.The starch content and the prorotion of amylose and amylopection of Chongqing commercialized wheat were bigger than those of the corner stone breeding parents,which identified that the starch quality of Chongqing wheat should be improved.7.The protein composition of the corner stone breeding parents and commercialized varieties of chongqing wheat were delt with cluster analysis,when the class distance was 16.37,35 corner stone breeding parents were divided to 4 kind;according to their SDS-PAGE results,they wre divided to 4 kinds when the class distance was 1.1;according to the cluster analysis of the starch components,they were divided to 4 kind when the class distance is 20;according to all the character,they were divied to 3 kind.The results of the cluster analysises have been compared.
