The subject of this study was the defatted fly maggot. The level of each influential factor which the temperature, time and concentration of substrate were preliminary screening in advance, and the force-treatment condition was optimized by orthogonal experiment. The optimal force-treatment condition temperature was 90℃, the time was 20 min, and the concentration of substrate was 2%.We produced fly maggot pepetide by hydrolyzing defatted fly maggot of force-treatment with compound enzyme and selected the optimal hydrolyzing condition including temperature, the amount and composition of enzyme, reaction time and pH. The level of each influential factor was preliminary screening in advance, and enzymolysis condition was optimized by orthogonal experiment. The results showed that the optimal enzymolysis condition of defatted fly maggot was A1B3C3D4E3 , which the percentage of flavor enzyme, papain, pepsin and trypsin (C) were 35%, 50%, 5% and 10%, respectively. Enzyme amount (B) was 8000U/g, and the temperature (A), time (D) and pH (E) of enzymatic hydrolysis were 45℃, 7 h, and 7.5 ,respectively. Hydrolysis temperature was the main influence factor in defatted fly maggot enzymolysis.The fly maggot pepetide was determined the sense-organs nature, yield and molecular weight. The fly maggot peptide was brown, fairly delicate and no abnormal flavour powder, the yield of peptide was 35.42%, the molecular weight of bulk peptide was 5.8 KD.0.2%, 0.5% and 1% of fly maggot peptides were supplied respectively to the diet of SD rat to estimate the effects of fly maggot peptides on nutrient, antioxidant and immune function. The results indicated:(1) Added 0.2%, 0.5% and 1% of fly maggot peptides respectively to the diet of SD rat homoenergetic to increase significant the daily gain (P<0.05) and decrease the feed/gain ratio (P<0.05) of SD rat. Added 0.2% of fly maggot peptides no significant on the nutritive substance metabolic rate in SD rat, 0.5% and 1% of fly maggot peptides manifest increased the nutritive substance metabolic rate in SD rat, and significant on the nutritive substance metabolic of CP,EE,CF,Ca,P (P<0.05).(2) Added fly maggot peptides to the diet of SD rat to decrease significant the MDA contents of SD rat blood serum (P<0.05), increase significant the GSH-Px (P<0.05). Added 0.5% and 1% of fly maggot peptides to the diet of SD rat to increase significant the CAT (P<0.05) and SOD (P<0.05) energy in SD rat blood serum. These results indecated that fly maggot peptides have anti-oxidation activity.(3) Added 0.5% and 1% of fly maggot peptides to the diet of SD rat to increase significant the spleen and thymus quotient in SD rat, to increase significant the IgA, IgG and antalzyme content of SD rat blood serum(P<0.05). These results indecated that fly maggot peptides has the activity of raise organism immunological function.
