Several fresh-maintaining techniques of fresh-eating maize in post-harvesting were studied from the year 2005 to 2007 by using Zhongnuo No.1 and Luhuangnuo No.6 which planted by the Shandong Province host in this paper. This research will provide the basis for the development of fresh-maintaining techniques of fresh-eating maize.The effect to fresh-eating maize quality which preserved remaining bracts or not under different temperature was studied. The result demonstrates that conservation of fresh-eating maize remaining bracts is lessening quicker and weightlessness rate bigger than no bracts fresh-eating maize packed with plastic bag at both ordinary and low temperature. The conservation effect at low temperature was better than at ordinary temperature, and the time retaining freshness was longer too. This result showed that the conservation effect packing with plastic bag down bracts was better than remaining bracts.Fresh-eating maize in post-harvesting were fresh-maintained with different smear film(such as Chitosan, smear film, physic acid)on homoeothermic. Physic acid is the best for holding water. Chitosan spreads film being most notable to the breath restraint. smear film with physic acid can restraint solubility sugar contents getting down is most obvious, otherwise, smear film free radical content such as lightening the film grease per-oxidation effect , cutting down MDA spread a film but obvious increases by. The Tu film stores under low-temperature condition being able to change moisture content and solubility sugar contents, reducing the fresh food waxy corn obviously gathers queen weight sudden drop trend, makes to store up obvious extension of scheduled time. Spread film middle three kinds, establish acid spreading a film disregarding showing fairly good effect in the field of every such as guaranteeing water effect, solubility sugar contents, antibiosis ability and eating taste quality.
