Rosa rugosa Thunb. was used to investigate the discipline of growing development and the cause of formation of color variation, and length and diameter, volume, fresh weight, physiological index were measured from April to August. Physiological index included dissolubility sugar, starch, soluble solids, titratable acidity, chlorophyll, carotenoid, anthocyanins, flavonoids and protein and so on. This study analyzed growing development and color variation of berry, the results can be summarized as followed:(1) The growth curves of Rosa rugosa Thunb. showed double sigmoid pattern, It meant that the growth curves of volume, fresh weight, length and diameter showed double sigmoid pattern during development of berry. The shape changed from obround to oblateness.(2) This study observed and recorded the variation of berry color adopted digital camera. The color variation of berry as followed: bottle green, kelly, yellow, salmon pink finally. Fifty days after blossom, the berry become to change color, optimal ornamental period lasted three months.(3) Carotenoid and anthocyanins were pigmentation matter mainly. When the berry raped, took red and orange. Berry colors were dependent up on the content of anthocyanins. At the same times, other coloring matter also influenced final show. When raped, the berries were in various shades of color, reasons were the proportion of anthocyanins and carotenoid.Carotenoid in the nightside pulp was inferior to adret, the contrast was remarkable, and chlorophyll was on the contrary. The results indicated retrogradation degree of adret pulp was greater than nightside, in accord with the accumulation of carotenoid. When raped, the color of nightside pulp took on kelly, but adret's was salmon pink.(4)The curves of dissolubility sugar showed the trend that was from high to low in the course of berry development, in the early stage of berry development, the content of dissolubility sugar were low, increased with the development. On the change of sugar, glucose and sucrose were dominant; the content of fructose was lack. In the course of berry development, fructose,glucose and sucrose accumulated continuously. When raped, the content of sucrose was to lower; the reason may well be that sucrose brook down into fructose and glucose. The content of starch took on "parabolic curve", accumulated in the early stage, retrogradated in the late stage.Titratable acidity rose first, felled with the development, this trend were similar to orange, apple and grape; protein showed "high~low~high~low", when raped large numbers of nutrient substance accumulated, but water content decreased.On the sides of nightside and adret of berry, the content of glucose, Vc, titratable acidity, TSS,protein were no significant difference. The content of sucrose,fructose,dissolubility suga on the nightside were all lower than adret side remarkably.(5)In the development of berry, simple correlation analysis was carried out amongst various physiological indexes, the results indicated: chlorophyll and flavonoids existed positive correlation remarkably, negative correlation between chlorophyll and carotenoid, anthocyanins. carotenoid and anthocyanins existed positive correlation notably, related coefficient was 0.953. carotenoid, anthocyanins and flavonoids were indistinctive.(6)Through principal component analysis indicated berry development were combined action of glucose, protein, sucrose, considering comprehensive action of various physiological indexes in the progress of analysis.
