The bee-pollen includes each nutritive factor which the human body needs, been honored as"the miniature nutrition storehouse"by public. Camellia bee-pollen which is large output in our province and has the better quality is selected as a raw material. In order to overcome the sensory quality of bee-pollen, we studied the processing technology and formulations of bee-pollen tablets. We apply the formula and process to produce rape, lotus bee-pollen tablets, and apply three kinds of fuzzy mathematics assessment of the sensory quality of bee-pollen tablet. The result is as follows.1. The studies improved the traditional temperature difference break frozen bee-pollen, taking camellia bee-pollen as raw material, used step by step decreases temperature to difference temperature break frozen bee-pollen. On the basis of single-factors experiments, the Box-Behnken center-united experimental design principles were used to design the experiments and the responsive surfaces analysis of 3 factors and 3 levels was adopted. Experimental results indicated that the temperature decrease gradient and the freezing time affected the broken rate of camellia bee-pollen. When the temperature decrease gradient is 3℃, the freezing time is 34min, defrosting temperature is 97℃, broke rate of camellia bee-pollen was maximum. In the condition, the estimated value was 91.4958% and verified value was 91.12%.2. By the orthogonal experiments of water content and forming rate, the most appropriate production process of making particle is as follows: wetting agent is 60% alcohol containing 10%PVP, drying 2 hours on 55℃. In the condition, forming rate of bee-pollen particle was 97.2%.3. By the orthogonal experiments, regarding the content of bee-pollen, the proportion of glucose and sucrose, the content ofβ-CD, inspecting sensory evaluation hardness and forming rate of tablet. The results of orthogonal test on forming rate of tablet show that the effects of three factors weren't significant. Considering the experiment on the amount of lubricant and sweeteners and citric acid, the most appropriate proportion of making tablet is as follows: 40%bee-pollen, 15%β-CD, 20%glucose, 10% sucrose, 1% citric acid, 14% malt-dextrin. Camellia bee-pollen tablet which was make in accordance with the above-mentioned have special fragrance, balancing on sweet and sour, with a good collapse.4. The studies selected the flavor, texture, organizational status, hardness, color for the evaluation of the factors, contrasted camellia bee-pollen tablet, rape bee-pollen tablet and lotus bee-pollen tablet on sensory evaluation. This paper assessed three different kind bee-pollen tablet by the method of"function F"and"biggest degree of membership". The result of three different kind bee-pollen tablets is"general". Sorting from good ones to bad ones is as follows: lotus bee-pollen tablet > camellia bee-pollen tablet > rape bee-pollen tablet. Production technology of camellia bee-pollen tablet that can be used to produce lotus bee-pollen tablet, but the rape bee-pollen is used when the process needs to be improved.
