Probiotics are viable microbes that can beneficially influence the microbial balance of the host. The probiotics are good or not due to the selection of bacteria strains.Adhesion is the first step of interaction between microorganisms and the gastrointestinal tract. Adhesion is also the premise that the probiotics show a marked effect. Probiotics must adhere to the gastrointestinal tract can they form an organism barrier with the normal bacteria in gut together. This barrier can influence planting , occupying and breeding of the bacteria that invade into the gastrointestinal tract. These probiotics also can produce biocatalyst, bioactive peptide and some metabolic product such as organic acid, hydrogen peroxide and bacteriocin that can kill the pathogenic bacteria or prevent them planting in the gut. Therefore the adhesion ability of probiotics becomes one of the most important indexes during evaluating the quality of the beneficial strains.
