Aflatoxins are secondary metabolites produced by Aspergillus flavus,Aspergillumsnomius and Aspergillus parasiticus,they commonly contaminates agricultural commodities,food and animal feedstuffs.These toxins are highly toxic,mutagenic,teratogenic andcarcinogenic.Aflatoxin B1(AFB1)has the largest extension and the strongest toxicity,itseriously threatened human and animal healthy or life safety.In order to know the contamination situation of AFB1 in main foods of our country,takeeffective measures to control AFB1 contamination to guarantee the food safety,weinvestigated AFB1 in main cereal and vegetable oil foods and did a risk assessment of AFB1 inthe two kinds of foods.AFB1 contents in samples(486 cereal foods and 146 vegetable oilfoods)from 18 big cities were determined,the results were compared to the maximumpermissible concentration.The distribution of AFB1 in main big cities and the two kinds offoods were analyzed.The data got from this research can be used to set the permissibleconcentration of AFB1 in foods and to establish the emergency management and warningsystem for AFB1 in foods.The main results of this paper:(1)AFB1 contents in two peanut foods and three peanut oil foods surpassed thepermissible concentration of national standard.(2)The positive rates of AFB1 in cereal and vegetable oil foods were 0.41%,2.06%,respectively.(3)The contamination situation of AFB1 in south was worsen than that in north,especially in cities such as city 17,city 3,city 8,city 4 and city 2.(4)According to the average and the 95%upper confidence limits value,the risk of AFB1was 3.5,4.0 per million,respectively.The results of city 17 were 3.7,4.7 per million,respectively.
