Propolis is a complicated material,which is formed by many type of component,such as the resinlike substance secreted from gemma and branch gathered by Apis mellifera,the mandibular gland of honeybee and the beeswax ect.The most chemistry composition of propolis are several biologic active materials,such as flavones,terpene alkene and carbolic acid ect.It had been reported to possess various biological activities such as antiviral, antibacterial,anticancer,antioxidant,reducing blood fat,regulating the immune function of organisms ect.In recent years,propolis was extensively noticed for its strong health-maintain and adjuvant-therapy functions to human beings.This paper focused on the extraction technology of flavones in propolis,on the antibacterial activities and the corresponding mechanism of the propolis extraction,on the antioxidant activities of the propolis extraction and its application in food.The main results were as follows:(1) The way of ethanol extraction assisted by ultrasound was adopted to extract the flavones of propolis.The most advantage processing conditions were listed as follows: ultrasonic time is 28.6 minutes,proportion of ethanol and propolis is 14(mL/g),ultrasonic power is 390W,concentration of ethanol is 95%,marinate time is 12h and extracted for twice.The flavones content is 27.10%.(2) There different extracts of propolis were prepared and their antibacterial activities were examined against five bacteria,which are common bacteria tO induce food corrupt. The results showed that ultrasonic ethanol extraction had the best antibacterial activities, the second was the ethanol extraction and the last one was water extraction.The order of prohibitive activities effect on ultrasonic ethanol extraction testing was:Sac-charomyces cerevisiae>Bacillus subtilis≈Staphylococcus aureus>Escherichia coli>Aspergillu sniger, and the MIC value(mg/mL)of above five microorganism was 0.13,0.25,0.3,0.8 and 10.5 respectively.(3) The extracts of propolis were prepared and its antibacterial activities was examined against above five microorganism.The results showed that extracts of propolis had higher antibacterial activities on G+ bacteria than G- bacteria,and had lower antibacterial activities on Aspergillu sniger;Too higher temperature would reduce the antibacterial activities of propolis;The lower of the pH value,the higher antibacterial activities of the propolis,and Na+,Fe3+,Mg2+,Ca2+ and K+ could not affect the antibacterial activities of propolis remarkablely.Select one G+ bacteria and G- bacteria,separated its thalli added to extracts of propolis,detected the content of ALP andβ-galactosidase.Results showed that propolis can augment the permeability of thalli.(4) The different extractions of propolis showed strong antioxidant ability,they could scavenge free radicals,such as hydroxyl radical and superoxide radical.In addition they also had strong reducing power and chelating power in certain range.The ability of antioxidation is direct ratio to the use level of the extractions of propolis.The results of propolis used in sausage's antioxidant showed that propolis could restrain the fatty acids value,the POV value,the production of MDA and it had effective activity in inhibiting lipid oxidation.The ability of antioxidant is direct ratio to the concentration of the propolis in certain range,so propolis is a well kind of antioxidant reagent.
