It was studied that the process of extracting, refining, oxidationresistant and antimicrobiall effects of ellagic acid from Red raspberry. The determination of ellagic acid was established by High Performance Liquid Chromatography (HPLC). The optimum technological conditions of extracting were confirmed. And the optimum purified condition was studied by high-speed counter current chromatography (HSCCC), At the same time, the oxidationresistant and antimicrobiall effects of ellagic acid was measured.The results showed that: The content of in red raspberry was determined by HPLC with as standard control. The standard curve of ellagic acid was good linearity in of 0.322μg to 8.05μg. The average recovery of ellagic acid was 93.78% with the relative standard deviation 0.98%. The method is simple, rapid and accurate. It can be used for determining the content of ellagic acid in fruit of red raspberry.It was studied that process of extracting ellagic acid from red raspberry by acetone. The main influence factors were studied. The optimum process conditions were comfired by orthogonal method. The results showed that: The influence order of each factor on the extracting of ellagic acid was that the concentration of solvent acetone>the ratio of liquid to material >the extracting time>the extraction temperature. The optimum extraction conditions: the concentration of acetone was 80%, material fluid ratio was 1:12(g:mL), temperature 80℃, taking time 90mins. The content of ellagic acid the extraction liquid was as high as 323μg/g.An method was developed for the separation and purification of ellagic acid from crude extract of red raspberry by high-speed counter current chromatography (HSCCC), The results showed that: a two-phase solvent system composed of n-butanol-isopropanol-water(2:1:3,v/v/v),the upper phase was used as the stationary phase,while the lower phase was used as the mobile phase, and the flow rate ,revolution speed were 2mL/min,850r/min, separately. Under this condition ,35.2 mg of ellagic acid was obtained at 81.6% purity from 120g of Red raspberry.The purified ellagic acid of reducing capacity, antioxidation actions to axunge, scavenging action to hydroxyl free radical(·OH), antioxidation actions to DPPH·(1-diphenyl-2-picrylhydrazino) free radical was studied.As indicated by the experimental results, Ellagic acid has a considerable reducing capacity ,it aslo shown that can stop the oxidation of axunge;And scavenging action on both the hydroxyl free radical and 1-diphenyl-2-picrylhydrazino free radical, With a good antioxidant capacity.The inhibition activities of ellagic acid extract from red raspberry to some common microorganisms were studied. The results revealed that the inhibition effect of ellagic acid extract from red raspberry on bacteria such as, E.coli, Salmonella, Bacillus subtilis was good,On the other hand, the ellagic acid extract was less efficient in inhibiting Mycete and Saccharomycetes such as Aspergillus oryzae, Aspergillus niger and than in inhibiting bacteria.
