Queen bee larvae contains a variety of nutrients and bio-active substances which are necessary to people. It turns bad easily because of oxidation. So the research, processing and use of queen bee larva is restricted. Therefore the accurate determination of these nutrients is rare. This study works at analyzing the content of queen bee larvae accurately by the measurement in order to know the biological activity and value, draft quality standards, control the quality and regulate the market of queen bee larvae.On the hydrolysis process of queen bee larvae, on the basis of factors fixed, this paper studies at the single factor analysis and the multivariate orthogonal experiment, finally determined the optimal conditions of enzymatic hydrolysis. The conventional physical and chemical indicators (moisture, ash, protein, etc.) are measured by the standard reference methods. The kinds and contents of amino acid are determined by automatic amino acid analyzer. This paper also studies on methodology and develops some special methods for determination of nutritional ingredients, such as: determination of water soluble vitamin, adenosine phosphate, coenzyme Q10 and taurine in queen bee larva by high performance liquid chromatography.Experimental results: the optimal conditions of enzymatic hydrolysis: the water ratio is 1:5, pH=2, 3 hours, enzyme dosage is 5%, temperature is 50oC. The mean moisture content is 72.615 g/100g, ash content is 1.251 g/100g, protein content is 12.99 g/100g, suger is 13.64 g/100g. Before hydrolyzing, the amino acid content is rich, after hydrolyzing, the amino acid content increases obviously, for example, the content of Lysine, Valine, Threonine is more than 100 mg/100g. This study develops several kinds of new methods to determine the nutrition. The taurine is 3.35 mg/L, several major adenosine and its metabolites can be detected in the queen bee larva and some kinds were significantly, four kinds of vitamin are measured, the content of vitamin B6 is highest, Coenzyme Q10 content is as high as 20.08 mg/L. The results show that the linearity of measurement is good, the recovery is high with the number of 90% to 110%, and the precision is good.The hydrolysis of queen bee larvae provides a method for the processing and exploitation of queen bee larvae, and the effect is ideal. Furthermore the study explores new methods with modern analytical means to analysis queen bee larvae hydrolysate. Several methods are innovative. In a word, the study has systematicly analyzed the queen bee larvae.
