China has long food culture, and is famous for the "delicious meal". The reforming and opening up brings the flourish of economy, the increased steadily income of the resident of town and country and the vigorous development of travel and business, that have offered powerful economic basic and market foundation for the steadily prosperous of the meal trade. Especially with the raising of living standard and the faster living rhythm, the fast food trade has developed in higher speed. After the fast development of tens of years (nearly with the speed increase of annual 20%) , Fast food already has become the important strength to support the meal trade to keep on development . The trade of fast food still has a huge potentiality in high speed development for a long time . Economist claims that the fast food trade will become one of the biggest, and the most attractive trades in the merchandise and service market in 21 century.But review the Chinese fast food trade market. Although the Chinese fast food style takes to let timeliness, land productivity and popular support , it is always in the inferior situation in the competition with the westem fast food style . Evidently, the Chinese and Western fast food enterprise have huge gap. How to find out and reduce the gap and make the modern Chinese fast food enterprise, that have become the common subject in the theoretical and business circles. We can get the major source of the gap from analyzing the traditional meal trade, the Chinese and Western fest fixxl enterprise in all directions. One is the outdated operation concept; the other is the lag method of the management. It is important for us to learn from the advanced model of the werstern enterprise, and considering the domestic conditions, we must innovate to absorb the model such as the chain operation, the industrialization standardization, the nutrition of food and so on.Through the innovation of the operation concept and the method of the management, we can reduce the gap between the Chinese and western fast food. Furthermore we can make the Chinese modern fast food style in short time. Then we can get back what belongs to us, and eventually, we can probably get more than it.
