China is rich in edible mushrooms resources, production accounted for65%of worldproduction. Edible mushrooms not only have a high nutritional value, but also have highmedicinal value. Mushroom fruiting bodies are rich in polysaccharides, which have a variety ofphysiological activity. In this thesis, pholiota nameko, black fungus, tremella three kinds ofedible mushrooms and high-quality corn dietary fiber were raw material and added to producehigh-fiber edible mushrooms cold food.The main results of the research were as follows:1. The High-fiber pholiota nameko ice cream formula was optimized by orthogonal testdesign, the optimal formula was1.0%of High Quality eorn Dietary Fiber,4.0%dosage ofpholiota nameko,10.0%of soft suger,5.0%of dextrin,6.0%of milk powder,0.1%of CMC-Na,0.4%of glycerol monostearate.2. The High-fiber pholiota nameko snow formula was optimized by orthogonal test design,the optimal formula was1.0%of High Quality eorn Dietary Fiber,3.0%dosage of pholiotanameko,10.0%of soft suger,4.0%of milk powder,0.3%of CMC-Na,0.4%of glycerolmonostearate,4.0%of dextrin.3. The High-fiber black fungus ice cream formula was optimized by orthogonal test design,the optimal formula was1.0%of High Quality eorn Dietary Fiber,9.0%dosage of black fungus,12.0%of soft suger,0.4%of glycerol monostearate,6.0%of milk powder,0.1%of CMC-Na,4.0%of dextrin, and0.3%of gelatin added.4. The High-fiber black fungus snow formula was optimized by orthogonal test design, theoptimal formula was1.0%of High Quality eorn Dietary Fiber,9.0%dosage of black fungus,12.0%of soft suger,4.0%of milk powder,5.0%of dextrin,0.2%of glycerol monostearate,0.1%of gelatin and0.2%of CMC-Na added.5. The High-fiber tremella ice cream formula was optimized by orthogonal test design, theoptimal formula was1.0%of High Quality eorn Dietary Fiber,3.0%dosage of tremella,10.0%soft suger,6.0%milk powder,4.0%dextrin,0.4%of glycerol monostearate,0.1%of CMC-Na.6. The High-fiber tremella snow formula was optimized by orthogonal test design, theoptimal formula was1.0%of High Quality eorn Dietary Fiber,4.0%dosage of tremella,4.0%milk powder,4.0%dextrin,0.3%glycerol monostearate,10.0%of soft sugar,0.2%of CMC-Na.7. Crude pholita nameko strains extracellular polysaccharides were obtained through waterextraction, purified through Sevag for the removal of protein, actived carbon decoloration,precipitation with alcohol and DEAE-sephadexA-25, SephadexG-75column chromatography fraction-ated into only1fractions pholiota nameko extracellular polysaccharide,PEPS. Neitherprotein nor nuclear acid characteristic absorption peaks were shown at200~500nm in theUV-visible spectra of PEPS. The relative molecular mass of PEPS was determined by thedextran gel filtration method to be58749. Analysis of the structure of PEPS by highperformance liquid chromatography (HPLC), the results showed that PEPS was uniformheteropolysaccharide and composed ofxylose(Xyl), mannose(Man), glucose(Glc) andgalactose(Gal) xylose, which contents were2.74μg/mg,5.37μg/mg,3.00μg/mg,1.05μg/mg,respectively.
