Structured lipids is a kind of lipid that reconstructs the composition and locationof the fatty acid on natural lipid, and has specific physiological function. GC andUPLC-ELSD were used to determine fatty acid composition and triglyceridecomposition of camphor tree seed oil and soybean oil; Through single factor andorthogonal experiments, the synthesis process of medium-and long-chain structuredlipids was studied by camphor tree seed oil and soybean oil in the present of1,3-specific immobilized lipases (Lipozyme RM IM) whose catalytic was better. Fattyacid composition, triglyceride composition and physicochemical properties of theproduct were also studied.(1) Camphor tree seed oil was main medium-chain saturated fatty acids, whilecapric acid, lauric acid and caprylic acid content was respectively51.49%,40.08%and2.57%. Soybean oil was main long-chain unsaturated fatty acids while linoleicacid, linolenic acid that were essential fatty acid account respectively59.50%,6.93%,and oleic acid content was24.09%.(2)Single factor experiment was used to study substrate molar ratio, enzyme load,add water, reaction temperature and reaction time on transesterification. On this basis,orthogonal experiment was designed to optimize synthesis process of Medium-andLong-chain Structured Lipids. Under the best condition, the average content ofMedium-and Long-chain Structured Lipids was55.1%. After the transesterificationreaction, medium-and long-chain structured lipids whose ECN is36and38weresynthesized.(3)Acyl migration happened in the process of transesterification, which reactsCamphor seed kernel oil with soybean oil in the present of1,3-specific immobilizedlipases(Lipozyme RM IM).(4)Physicochemical properties indicators of the transesterification product wereas follows: peroxide value was1.3852mmol/Kg, saponification value was220.67mgKOH/Kg, iodine value was20.15gI/100g and acid value was0.2mgKOH/g, themelting point was9±1℃.
