In fact the structured lipids is a new kind of special lipid that reconstructs the composition and the positional distribution on the glycerol backbone of the fatty acid on natural lipid, and it has many physiological functions and nutritional value. This article has measured the fatty acid composition of camphor seed kernel oil、soybean oil and palm stearin, and the triglyceride composition of amphor seed kernel oil and soybean oil. Sodium methylate catalyzed transesterification to synthesize mediumand long-chain triacylglycerols from the raw materials of amphor seed kernel oil and soybean oil,and zero trans fatty acids plastic lipids from the raw material of amphor seed kernel oil and palm stearin. The physicochemical properties of transesterification products were also studied.1. The most abundant fatty acids in camphor seed kernel oilare lauric acid and capric acid, accounted for more than 90% of the total fatty acids; In soybean oil the oleic and linoleic acid content up to 83.59% In palm stearin the palmitic acid content of 65.73% and the oleic acid content of 30.09%.2. Sodium methylate catalyzed transesterification to synthesize medium-and-long chain triacylglycerols from the raw materials of amphor seed kernel oil and soybean oil. Single factor experiment was used to study the effects of material ratio, reaction temperature, reaction time and amount of catalyst on the transesterification reaction. On the basis of its results, orthogonal experiment was designed to ascertain the best synthesis process. The best synthesis process is as follows: the mass ratio of raw soybean oil and camphor oil is 35:65, the reaction temperature is 60 ℃, the reaction time is 20 min, the amount of sodium methylate is 0.3%. Under These conditions, the average content of MLCT was 76.23%. Physicochemical properties of the transesterification product were as follows: acid value was 0.2205mgKOH/g,iodine value was 20.53 gI/100 g, saponification value was 230.37 mg KOH/Kg,peroxide value was2.7653 meq/Kg.3. Sodium methylate catalyzed transesterification to synthesize zero trans fatty acids plastic lipids from the raw material of amphor seed kernel oil and palm stearin. Single factor experiment was used to study the effects of reaction temperature, reaction time and amount of catalyst on the transesterification reaction. On the basis of its results, orthogonal experiment was designed to ascertain the best synthesis process. The best synthesis process is as follows: the reaction temperature is 85 ℃, the reaction time is 60 min, the amount of sodium methylate is 0.35%, the best ratio of raw materials is 1:1.And the crystal form of product is β’which measured by XRD, isotherms show that the product has good compatibility, it hadn’t detected trans fatty acids in the product.
