Taking sweet potato residue as the materious In this paper. Firstly, according to the ultrasonic-assisted enzymatic alkaline method, extract three kinds of cellulose from sweet potato grounds, such as ordinary cellulose, ultramicro cellulose and nano cellulose. Compare the differences of physical properties to those three kinds of cellulose by methods of chemical analysis and instrumental analytical technique. Finally, in order to provide a theoretical foundation of ellulose was extracted from sweet potato using in food industry, we start a research on physical features of ordinary cellulose, ultramicro cellulose and nano cellulose by establishing a model of animal experiment.The main conclusions of the study are as follows:1、In this paper, extract three kinds of cellulose from sweet potato grounds, such as ordinary cellulose, ultramicro cellulose and nano cellulose, by the ultrasonic-assisted enzymatic alkaline method. Research on swelling property, water capacity, oil adsorption capacity, digest capacity and the capacity of absorption and release of cholesterol and cholate of these three kinds of cellulose.Consequences:with the decrease of particle size of cellulose, the swelling property, water capacity and oil adsorption capacity of cellulose will increase. There is a significant difference among different kinds of cellulose(P<0.05), and nano cellulose is higher signally than ordinary cellulose on these properties.ccording to the research on digest capacity, the digest capacity will decrease when particle size of cellulose decreases. Significant difference exists among these different groups of cellulose, and the digest capacity of nano cellulose is signally reduced than ordinary cellulose. When research on the adsorbability of cholesterin and sodium cholate, we find out that in different PH, as time goes on, the adsorbability of cholesterin and sodium cholate will increase, at a certain time, the adsorbability of cholesterin and sodium cholate reaches an equilibrium, at this time, the adsorbing will stop. However, in different PH, even at the same time, the adsorbablity will be different. The lower pH is, the stronger the adsorbablity will be. When it comes to release property, in different pH, as time goes on, the release property of cholesterin and sodium cholate will reduce. At a certain time, when the release property reaches an equilibrium, it will stop release. Like digest capacity, at the same time, the lower pH is, the stronger release property will be.2、Effect on three different particle size of cellulose’s effect on CHOL metabolism in plasma and hepar by feeding fodder with these cellulose for rats.Research on different particle size of cellulose’s effect on emasculated female rats’ blood fat and liver fat, discuss CHOL in plasma and hepar’s reduction coursed by feeding fodder with these cellulose for rats. Choose40SD adult rats, feed adaptively for one week with basic food, divide into five groups randomly by weight. Operate four groups of them on ovariotomy. One weeks later, divide into common group, ordinary cellulose group, ultramicro cellulose group and nano cellulose group, then compare with female rats with ovariectomized at the same age. Dissect rats after4weeks feeding, and determine them.Consequence:ovariectomy can increase TC, TG, LDL-C and non-HDL-C, in plasma of ovariectomized rats signally. On the other hand, the rate of fat, and the accumulation of TRIG and CHOL is increasing signally. However, three different particle size of cellulose in fodder can decrease the content of TC, TG and LDL-C in plasma, improve the leve of lipoproteins in plasma of ovariectomized rats, decrease the concentration of CHOL and TRIG in hepar of ovariectomized rats as well as stop lipid droplet’s gathering in ovariectomized rats’hepar. These data indicate that HLP caused by estrogen deficiency can be stopped by these three different particle size of cellulose.The body weight gain and food intake will increase when three different particle sizeof cellulose intake. The body weight gain and food intake of rats fed by ordinary cellulose and ultramicro cellulose increased signally (P<0.05), it won’t arrive significance level but only trend to increase when feed by nano cellulose. Feed by different particle size of cellulose can decrease HMG-CoA reductase and expression of FXR, CYP7A1protein as well as mRNA in hepar signally(P<0.05). Otherwise, the expression of IBABP, ASBT and mRNA in ileum increases signally(P<0.05).3、Effect on emasculated female rats’intestine and CHOL in intestine by feeding fodder with three different particle size of cellulose.Consequence:fodder with each particle size of cellulose can increase cacum content、cacum issue、SCFAs and percent of water of cacum content、stoolof emasculated female rats signally, bring down pH, decrease content of free ammonia, increase the quantity of probiotic and suppress harmful bacterial growth, and intestinal environment will be improved in this way. Feed by three different particle size of cellulose can increase the content of TBA in small intestine, fat in faeces, TBA and neutral sterols in faeces signally. Moreover, highly significant difference(P<0.01) exists in emasculated female rats and ordinary rats.
