Jujube is the Chinese traditional fruit and widely cultivated for its fruit. Medicinal value and efficacies of jujube has a very long history. With the development of technology and science, the value of jujube should be re-studied and appreciated and for it is with diverse biological activities, such as flavonoids, polysaccharides and cyclic adenosine monophosphate (cAMP) etc., jujube has many functions:relaxation from fatigue, immunity improvement, anti-oxidation and so on.In this paper, the jujube was selected as raw material and was fermented for the powder preparation that sugar content was reduced, which is applicable to more people and well for storage. However, whether the composition changes during the fermentation or not, we determined the compositions in fermented jujube powder and compared with the jujube powder. cAMP is one of the most important biological activities, so we studied on me processing effects on the contents of cAMP in jujube. Based the above-mentioned research, we also studied on the effect of fermented jujube powder, jujube powder and jujube extract (polysaccharides20%and flavonoids77%) on immunologic function of immunosuppression mice to provide theoretical basis for jujube active substance study and development and application of health food. Through analysis, the main results are as follows:1Contents of protein, total amino acids, essential amino acids, flavonoids and cAMP (cyclic adenosine monophosphate) of fermented jujube powder are1.82,1.23,2.97,1.32and1.60times higher than those of unfermented jujube powder. After fermentation, total sugar, total dietary fiber and reducing sugar content are decreased by33%,0.82%and20.47%, respectively. Polysaccharide content is basically unchanged.2By different treantments, cAMP contents in jujube using different pre-treatments are not the same. The cAMP content in sun-dried jujube is higher than the shade-dried jujube, and the cAMP content is increasing with prolonged boiling time.3Effects of winter jujube powder, fermented winter jujube powder and winter jujube extract on immunologic function of immunosuppression mice were studied. Three dosage groups of winter jujube powder (1.5g·kg-1·d-1,1.0g·kg-1·d-1and0.5g·kg-1·d-1), three dosage groups of fermented winter jujube powder (1.5g·kg-1·d-1,1.0g·kg-1·d-1and0.5g·kg-1·d-1) and group of winter jujube extract were orally administrated for7weeks. The results showed that the high and middle dosage groups of fermented jujube powder can effectively increase spleen and thymus index, WBC, LY and Mon level, content of IL-2and TNF-α in serum of immunosuppressive mice and the activate T lymphocyte proliferation. The high dosage of jujube powder can also improve those indexs and the ability of carbon clearance in mice. The winter jujube extract can activate T lymphocyte proliferation.
