Fruit Industry Chain Traceability Technology And System Construction

Fruit industry is a crucial component of the agricultural economy in China. But atpresent fruit product quality and safety incidents have occurred, and seriously influenced thedevelopment of fruit industry in our country. The traceability system is one of the mosteffective approaches for the quality and safety control of agricultural products,its design andusage in fruit industry chain plays an important role on ensuring the safety of fruit products.The fruit industry chain was investigated and analyzed, the key traceable index system offruit industry chain was determined according to the principles of Good Agricultural Practices(GAP) and Hazard Analysis Critical Control Point (HACCP) system. The fingerprinttechnology of aroma and mineral elements were used for confirmed pear provenance.Eventually build a complete industrial chain traceability system of fruit. The main results areas follows:（1）Fruit industry chain divided into the following five modules: basic information basemodule, base management module, transportation management module, storage managementmodule, sales management module. The traceability key indicators of basic information basemodule includes base name, the responsible person, address, area, soil type, fruit varieties etc;the traceability key indicators of base management module includes fertilizer information(Fertilization date, fertilizer types, usage, application methods, the responsible person),irrigation information(Irrigation date, irrigation methods, source of water, the responsibleperson), pesticide information(date spraying pesticide type, application rate, applicationconcentration, application methods, the responsible person), gain information(picking dates,quantities, grades, packaging, packaging specifications, the responsible person), purchaseinformation(date of purchase, purchase quantity, inventory quantity, acquisition unit, contactnumber, license plate number, head) etc; the traceability key indicators of transportationmanagement module includes truck brands, destination, total transport, transport temperature,the transport distance, start time, end time etc; the traceability key indicators of storagemanagement module includes pre-cooling time, storage method, pre-cooling method,temperature, humidity, gas composition, storage time, a library and time etc; the traceabilitykey indicators of sales management module includes sales unit, location, head, contact time,sales, inventory location etc.（2）Features from different regions of the smell of pear and mineral elements fingerprint have their own characteristics. The data of aroma components and mineralelements were analysised by variance analysis, principal component analysis and discriminantanalysis. Samples of the three regions are distinguishable. Fingerprint analysis of odor andmineral elementscan effectively identify pear samples from different origins.（3）Combine the screening of fruit traceability chain traceability system key indicatorsand the fruit origin authentication technology, can build a complete fruit industrial chaintraceability system, which included a base information subsystem, a base managementsubsystem, a transportation management subsystem, a storage management subsystem, a salesmanagement subsystem, a maintenance subsystem, a traceability management subsystem andan information inquiry subsystem.The research and development of the fruit industry chain traceability system can recordfruit industry chain critical information, ensure fruit product quality; can quickly andaccurately find the problems, causes, responsible, timely recall of the products in question;confirmation the origin of the fruit product traceability and validation, ensure traceabilitysystems authenticity of the information recorded. It’s a truly "farm to table" and from "farm totable" fruit industry chain, which can provide theoretical and technical reference to protect thequality and safety of fruit products.
