As a new food processing technology, ultra-high pressure processingtechnology,had changed traditional food processing method for thousands ofyears.The health, safety, fresh products after processing,was widely welcomed bythe market.The ultra-high pressure cooperated with low temperature processingtechnology developed rapidly since putted forward, and the research of thistechnology show its fully feasibility and bright prospect in industrial application.Butthe existing theoretical research and equipment design level was far away fromindustry application,related products is also very rare on the market as a result of itshigh cost.The prospect of ultra-high pressured products largely depended on the researchlevel of food processing devices,while the large-scale and industrialized equipmentsare incomplete.So this paper was devoted to design a kind of new ultra-high pressurecooperated with low temperature food processing systems,with high technicalcontent, high efficiency and low cost,in order to contribute to the industrialization ofthis technology.After researching and evaluating for domestic and foreign existing foodprocessing system,and consulting the principle of pressure generation system andlow temperature system, we presented the the overall scheme of the ultra-highpressure cooperated with low temperature food processing device.According to the domestic situation of ultra-high pressure vessel technology,weadopted the frame-wire type as main bearing structure,and accomplished the designcalculation and intensity examination,drew assembly drawing and parts drawingbuilt a3D model of the device.We carried out the stress and strain analysis of the finite element simulationunder different working conditions to validate the result of design.The fatigue life of equipment was calculated by means of Ansys,that had a certain guidingsignificance to improve the safety and service life of device.At last,we designed a sealing structure for ultra-high pressure system,analysedand evaluated the sealing effect and performance.
