At present, as there are varieties of edible mushrooms in our county, the production and breed of them both stand on the top of the world, while because of poor storage, the circulating and supply are restricted to some extent.Chemical preservatives used in preservation of the human body, there will be more or less toxic effects on natural ecological environment will be adversely affected, which is strictly limited amount in food.Therefore, the development of efficient, safe and stable natural preservative has become one of the hot food science. Study found that essential oils have a strong antimicrobial activity, essential oils after microcapsule isolation of the active ingredient to the environment from the effects of humidity, oxygen, ultraviolet light, etc., in addition to the function of slow release microcapsules of fresh fruits and vegetables have a more lasting effect. The topics to cloves, cinnamon, garlic oil as a core material to β-cyclodextrin as wall material for microencapsulation to embedding rate index, developed the best embedding conditions. Make the best possible conditions for embedding microcapsules performed on fresh mushrooms. Microcapsules with different amounts of fresh mushrooms, measuring various physiological and biochemical mushrooms, fresh formula to determine the best.The final experimental results showed:(1) Ultrasonic cell smash clove oil can significantly increase the embedding rate. Through single factor experiment and response surface experiments, core wall material ratio, power and time (Ultrasonic Time) has a significant impact on the embedding rate. Optimal conditions clove oil-β-CD inclusion compound is:core mass (clove oil) and wall material (β-cyclodextrin) ratio of1:6, power65W, ultrasonic time13.4min. Under this condition, clove oil embedding rate reached21.5%. From the respective index comprehensive comparison, when cinnamon oil microcapsules amount of4%of cinnamon essential oil mushrooms on preservation of the best. (3) Sonicator help embedding garlic oil. Single factor experiment and orthogonal experiment results show that the core material than the wall, the wall material (β-CD)/water, power and time (Ultrasonic Time) has a significant impact on the embedding rate. Optimal conditions garlic oil-β-CD inclusion compound is:the core material (garlic oil)/wall material (β-CD) ratio of1:5, wall material (β-CD)/water ratio of1:8, namely ultrasonic time5min, the power is80W. High embedding was62.6%. Garlic oil for fresh mushrooms obvious effect, the greater the amount of microcapsules preservation better. Comprehensive comparison of the indicators from the point of view, the amount of8%microcapsules of essential oils of cinnamon mushrooms on preservation is the best.(4) Research cloves, cinnamon, garlic oil microcapsules Preservation of Storage mushrooms. The influence of each group browning, weight loss, Vc, reducing sugar content and other physiological and biochemical parameters. The results showed that4%of cinnamon essential oil microcapsules best fresh mushrooms, followed by8%garlic oil microcapsules, the worst group was the control group.
