During the processing of sesame oil,many sesame oil sediment was depositedeveryear,which contained various bioactive substance,we had not still found the methodeffectively, for studing the use of sesame oil sediment, this article studied the high contentoil of sesame oil sediment. first of all, We analyzed the components of sesame oilsediment, and then used sesame oil extracted by solvent from the sesame oil sediment,refined the sesame oil to the requirements, and the oxidation properties were determined.The results showed that:(1)Sesame oil content was82.86%, the moisture content was5.4%, phospholipidcontent was0.7%, crude protein was4.74%, initial acid value was3.56mgKOH/g, ashcontent was1.94%, the content of sesamin was3.26mg/g; The aroma components ofsesame oil sediment in short carbon chain heterocyclic compounds contained, for example,furan, pyrazine, pyrrole and thiazole class, such as nitrogen compounds, this nitrogenheterocyclic compound generated through maillard reaction; Sesame oil sediment after theextracted oil residue of particles were between2.500μm~32.00μm, microns particlescontent reached68.88%, The microns particles content between40.00μm~114.5μmreached12.67%. fatty acid composition of Sesame oil sediment extracted oil was givenpriority to with oleic acid and linoleic acid.(2)The best technology of using ultrasonic assisted organic solvent extracted oil was:ultrasonic power was110W, ultrasonic time was10min, dosage of solvent was7mL/g. Inthis condition, the sesame oil sediment in oil extracted rate reached87.78%. The besttechnology of fat acid as follows: at the beginning of alkali refining temperature: alkalirefining temperature was50oC early, alkali concentration was11baume degree,excessalkali was0.2%, the alkali refining time was30min. Under this condition, repeatedexperiment of fat acid reached96.68%. After acid and decolorization, the color value closedto the second order sesame oil,the acid value reached the high-grade oil, and the moisture content reduced largely, that had an important significance for oil storage.(3)Fragrance composition of bleached oil was still furan, pyrazine, pyrrole nitrogenheterocyclic compounds, these compounds accounted for most of the aroma components.Fatty acid composition of bleached oil and fatty acid composition of sesame oil changedlittle, after decolorizing contained palmitic acid, stearic acid, oleic acid, linoleic acid andlinolenic acid. After oil refined the oxidation induction time shortened, and its oxidativerancidity time was14h.(4)Sesame oil sediment could be used for making biodiesel, biodiesel as a kind ofnew energy, which had many advantages. Esterification reaction used sulfuric acid ascatalyst, through single factor test and orthogonal test, reaction temperature was50oC,reaction time was80min, methanol dosage was100v/w%, dosage of catalyst under thecondition was0.8%, methyl rate reached95.25%.
