Gardeniajasminoides Ellis is the first Edible and pharmaceutical resources, which is issued by Ministry of Health. Geniposide is the main physiological activity components of its fruit, which can eliminating dampness and heat, cooling blood and detoxifying, etc. In order to make better use of the prolific Gardenia resources in FuJian procince, Gardenia jasminoides Ellis cv. Fenguan No.l was used as material in this paper, discussing the varying content of Geniposide in all development periods, and Microwave vacuum drying (MVD) technology was applied to Gardenia fruits and optimize the extraction technology of Geniposide. The main results were as follows:1.Geniposide had strong stability under low temperature and weak acid to neutral; Geniposide content arised to peak in the first weeks, the16th weeks and the20th weeks after the fruit ripened. The content of Geniposide in the integral fruit were70.62mg/g,59.09mg/g and67.17mg/g, the same with b*values of the peak value. According to the different needs of production, we grab the different harvest time. If Geniposide or Iridoid class was mainly ectracted from Gardenia fruits, the fruits of the first week,16th week and20th week was the better fruits.2.The more microwave power, on/off ratio, microwave intensity and the less loadge were, the quicker dehydration rate and the shorter drying time was in MVD for Gardenia. Vacuum degree could shorten drying time by increasing vacuum degree. Hower, vacuum was not the significant impact on the overall water loss rate, the equipment would be demanded by increasing the vacuum degree to improvement of water loss rate.3.The optimum parameters of drying technology of MVD for Gardenia were: microwave intensity was6.0W/g, vacuum degree was-51kPa, on/off ratio was78s-on/42s-off, the drying time was60min, and through verification, the Geniposide content of61.13mg/g, unit energy consumption was38.91kJ/g.4.MVD reduced the drying time and unit energy consumption greatly, and its fruits was better than the traditional hot air drying on the reserves of chemical compositon such as Geniposide, and also on the reservation of color,shape of the dried samples, at the same time, the tissue of its samples bulk, and retained porou structure; Hower, the microstructure of the samples of the traditional hot air drying was closely, and no gaps.5.The optimum parameters of ultrasound-assisted organic solvent extraction technology of Geniposide were:ethanol concentration was40%, extraction temperature was45℃, extraction time was35min, ultrasonic power was240W, ultrasonic frequency was tri-band comples, ratio of liquid to material was1:20g/mL, times was3, and under these conditions, the extraction rate of Geniposide was46.12mg/g.6.The optimum parameters of ultrasound-assisted enzyme extraction technology of Geniposide were:cellulase was0.2mg/mL, pectinase dosage was8mg/mL, ultrasonic power was240W, ultrasonic time was12min, ratio of liquid to material was1:20g/mL, reaction temperature was46℃, hydrolysis time was100min, pH was6.2. Under these conditions, the extraction rate of Geniposide was56.14mg/g, which increased by21.73%compared to ultrasound-assisted organic solvent extraction technology. It was implied that it can dissolute more Geniposide by ultrasound-assisted enzyme extraction technology.
