Consumers and governments have paid more attention on food safety and environmental pollution by intensive crop production. Abusing farm chemical inputs, such as fertilizers, pesticides and herbicides, affects not only environmental pollution, human healthy but also agro-food international trade. Some countries list the chemicals MRLs (Maximum Residue Limit) on agro-food to protect consumers' healthy. It is the key point of how to reduce the chemical residue on agro-food and control the pollution that promoting development of sustainable agricultural production practice. Organic farm serves food safety and environmental objectives, as it rules out the use of chemicals.Although the organic farm has positive effect on environment and human healthy, as a producer, he or she must face alternatives-organic farming and conventional farming at the beginning of each year. If a farmer wants to switch to organic farming, he or she need to certify, and then would be gotten organic certificate. The organic certificate is the only signal that the consumers distinguish organic food from conventional food in the market. Fanners must pay fee for certificating every year, and this certificated fee is the fixed payout during production, meanwhile the organic farmers' revenue would be affected by yield risk and market risk. So that analyzing the factors determining the choice between organic and conventional farming are significant to policy makers.The main propose of this paper are to investigate which factors would impact the farmers' choice. We consider the factors can be classified into two parts: economic factor and non-economic factors. In our study, economic factor means that under certain acreage the additive net revenue from organic farming must equal or exceed the certificated fee; and the non-economic factors means psychological factors such as farmers' age, education, competitive pressure, and so on. Results based on detailed interviews with 129 tea producers in Jiangsu province (both organic and conventional) are analyzed by cost-revenue and logit model (Logistic Probability Unit Model). We drew some conclusion from our study. They are following: (1) The certain acreage is 9.08 km~2; (2) Young men would be prone to choose organic farming; (3) Increasing competitive pressure has influence on farmers' choice; (4) The reducing price gap between organic tea and conventional tea would affect farmers' choice; (5) The price of tea has positive influence on organic tea production.However, this is only our preliminary study. To learn more about the switch of farmers' choice would use time series data, and we'll have to expand our study and extend our survey time.
