The diary product contains rich nutrient substance and holds important meaning to improve citizens'diet structure, adjust industrial structure, increase agricultural income, accelerate the implementation of well-off society. During the past thirty years of reform and opening-up, Chinese diary Industry has made great achievements. In 2008, the total diary production is 37,815 thousand tons which is 38 times of 1978. Although China is now the third biggest country of origins of diary products, the per head consumption is quiet below the global average level. Particularly,"the toxic chemical melamine incident"in 2008 decreased the diary products consumption severely and took a heavy toll on Chinese diary Industry. Since the development of diary Industry is based on consumption demands, only when the diary consumption recover to its normal level, Chinese diary Industry can develop healthily and rapidly.This paper researches on diary products consumption in Inner Mongolia. It analyses the current situation of diary industry in Inner Mongolia, the diary products consumption levels and global features, the influence factors over diary products consumption and future trend of development, by using qualitative analysis and figures and charts. By quantitative analysis of the influence factors over diary products consumption, the most important conclusion that the citizens'income level is the primary influence factor on diary products consumption is drawn. In conclusion, strategy and suggestion on how to accelerate the diary products consumption in Inner Mongolia are put forward.
