Oviductus Ranae is the product of fallopian tube which was collected from female Rana. Because of the high medical value, even today, as high-quality nutrition, Oviductus Ranae is still exported to Japan and Southeast Asia. In order to improve the absorption and utilization of Ovidutus Ranae in the human body, the deep-processed products of it were paid more attention by people. At present, enzymatic hydrolysis,alkaline hydrolysis and acidolysis were usually used to the deep processing of Oviductus Ranae, but these processes was relatively complex and numerous steps, which were not conducive to environmental protection. In this thesis, microwave technology was used into the research to explore a method of the hydrolysis of Oviductus Ranae, which maybe broad the application of it.Oviductus Ranae was present in pure water under microwave irradiation, and after reaction of the hydrolysis the content of amino acids was measured to evaluate the degree of hydrolysis. At the same time,orthogonal experimental method was designed to find the best hydrolysis condition. The result of orthogonal experiment showed that the best conditions of hydrolysis were the temperature of 160℃, time for 3h,quality ratio of 1:200 and microwave power of 80 W. We also found that temperature was far greater than that of other factors on hydrolysis.On the other side, hydrolysis product contains 16 kinds of amino acids determined by amino acid analyzer, in which include about 65%essential amino acids of human being. The analysis of trace elements by ICP-AES showed that Oviductus Ranae contains at least 10 kinds of trace elements such as Zn, Co, Cd, Fe, B, Mn, Cr, Mg, Cu, and Sr, and the contents of Mn and B were much more than that of other elements. With the rise of temperature, molecular weight decreased significantly by the analysis of gel chromatography.The higher temperature, the higher of degree of hydrolysis, which indicated that the temperature was acted as the most important factor on the hydrolysis of Oviductus Ranae under microwave irradiation.
