The financial support to the Research Project (20130727074YY) from Jilin ProvinicalScience&Technology Department. In this paper, the physical and chemical properties ofOviductus ranae polypeptide powder and its granules are researched, and the mostpreferred formulation for vacuum freeze-drying is determined; with the same formula, theprocess optimization of spray drying was selected by the collection rate and the scores ofthe spray-drying powder; using the spray-drying powder, the granules of compoundenzymatic hydrolysate of Oviductus ranae was made by wet granulation, then, the processparameter optimization by the molding ratio, the modification of the flavor and thedetermination of brewing temperature were carried out afterwards, finally, the productanalysis and product quality standard were given. The results are as follows:(1) Preparation of vacuum freeze-drying Oviductus ranae polypeptide powder:applying the measurement of viscosity, emulsifying activity, emulsion stability, centrifugalsedimentation rate, moisture content, solubility, hygroscopic rate and the dissolutionproperty of emulsion and the powder, the most proper soluble solid content wasdetermined to be10%by single factor experiments, the most preferred formulation wasdetermined by L9(34) orthogonal experiment to be: malt dextrin: β-cyclodextrin: wheyprotein concentrate=16:4:25, glycerin monostearate0.04%; the compound freeze-dryingOviductus ranae polypeptide powder is increased by3.31%in solubility, dropped27.52%in moisture content,65.33%in hygroscopic rate and46.05%in the dissolution property.(2) Preparation of spray-drying Oviductus ranae polypeptide powder: applying thesingle factor experiments, the parameter of homogeneous process was determined to be65℃and10MPa, the temperature of the fixed bed was determined to be50-55℃; thequadratic orthogonal regression testing method on the process parameter optimization ofspraying drying characterized by the collection rate and the scores of the powder was usedin the research, and obtained2regression equations with similar optimal solutions, shownthe optimal parameters close to: inlet air temperature of158.5℃, feed flow rate of11.8L/h,soluble solid content of17.53%;the collection rate is53.1%under this process parameter, the physical and chemical properties of Oviductus ranae spray-drying polypeptide powderwas as followed: moisture content of2.33%, packing density of0.485g/ml, solubility of94.21%, hygroscopic rate of5.74%, static angle of repose of27.82°, dissolution propertywith dispersion time of85s。(3) Research on molding process of spray-drying Oviductus ranae polypeptide powder:determined the proper amount of setting agent as15%over the single factor experimentson the molding ratio, the hygroscopic rate, and the dissolution Property; the results of thesingle factor experiments showed the proper concentration of ethanol was close to90%with the proper amount of15%; the molding process with highest molding ratio tested byU10(103) quasi-level uniform designed experiments was: ethanol concentration of92%,dosage of wetting agent15%, drying temperature of50℃.(4) Modified the flavor of the granules of Oviductus ranae polypeptide by stevia sugarat the best dosage of0.18%; brewing temperature was tested and fixed between40-60℃;the results of the product analysis suits the quality standards well...
