In this study, Citrus grandis Osbeck were used as experiment material. The contents of flavonoids, carotenoids, different elements, protein, carbohydrate, Vc, VE et al were studied. The study is significant to the use of Citrus grandis and it is also important to enhance its value and fame. The results as follows:1. The total content of flavonoids in Citrus grandis pericarp increase steadily from Oct to Nov. But the total content of flavonoids in pulp on Nov. 15th is the highest. Carotenoids in pericarp and pulp on Nov. 15th have the highest content.2. The content of K is higher than other elements, and the content of K in pericarp is higher than in the pulp. The content of Ca is higher in the pericarp than in the pulp. The content of Fe and Se are higher than a lot of other Citrus compared with literature.3. The levulose in the Citrus grandis was in low amount. The total content of sugar in pericarp was higher than in the pulp.4. The content of other function components in the pericarp are generally higher than in the pulp, such as protein, Vc, VE and so on.5. From the results of the polyamide TLC, we can conclude that the speed of motion are Hesperidin>Naringin>Rutin in the polyamide, and the varieties of flavonoids in fruit are not very rich. There is a distinct point that is consistent with the point of Naringin. Maybe, the extraction of the pericarp contains Naringing.6. The only flavonoid in pulp is Naringin, and it is in low amount. The Naringin in pericarp is abundant. There are no Rutin and Hesperidin in Citrus grandis extraction.7. The preferable extracting conditions for extracting flavonoids fromCitrus grandis pericarp using methanol as follow: using 70% methanol 60 times same as the weight of materials and extracting extent for 3h at 60 o The preferable extracting conditions for extracting flavonoids from Citrus grandis pericarp using ethanol as follow: using 60% ethanol 60 times same as the weight of materials and extracting extent forlhat 70o8. Pericarp extraction' activity of scavenging hydroxyl free radical is stronger than pulp extraction. Ethanol extraction of dry pericarp has the strongest activity of the scavenging hydroxyl free radical in the different dry pericarp extraction. Fresh pericarp extraction has the same result. But methanol extraction has the strongest activity of the scavenging hydroxyl free radical in different dry pulp extraction.9. The varieties and concentration of hormone are very important to the callus' inducement and growth. 2.4-D and IBA benefit for the callus inducement, and IBA, NAA benefit for the callus growth.10. 200mg total flavonoids can be extacted from lOOg callus. So it 's feasible to obtain flavonoids from callus of Citrus pericarp .
