The test used Qiu North spicy as raw materials,the optimal parameters of extracting capsanthin by solvent and microwave assisted,the methods of eliminating capsaicinoids from paprika oleoresin and the emulsification method of the capsanthin have been studied.The above studies can provide references for application and exploration of capsicum.the main results showed:The optimal parameters of solvent extraction from Qiu North spicy were as following:N-hexane used as extracting solvent,The ratio of raw solvent to material is 60:2ml/g,extracting 100min at 60℃,for 2 times,the color value of the raw product reached 104.6,the yield was up to 8.22%.The optimal parameters by microwave extraction were vaporized solovent 90% ethanol,Microwave power 300w,pretreatment time 120s,extracting solvent n-hexane,the ratio of raw solvent to material is 18:2(ml/g),temperature 60℃, extracting time 15min for 2 times,the color value of the raw product reached 108.4, the yield was up to 9.11%.The optimal parameters of Sodium hydroxide pretreating mothods of eliminating capsaicinoids from 100g/ml paprika oleoresin solution,the results asfollowing:adding 3.0 mol/l NaOH,reaction for 3.0h at 70℃.two phase fluid volume ratio 20:40(ml/ml). Under this conditions,the yields of capsanthin got 81.27%,the color value of capsanthin product reached at 312.84.The optimum parameters for capsanthin extracted from the base 60 ml in the pretreatment liquid,including water phase containing sodium chloride in the quality scores of 3.0%,ethanol concentration of 70%,adding 20ml n-hexane,extraction temperature 60℃,put in constant temperature oscillator frequency of 150 rpm,10 min oscillations,and balance it for 60 min,extraction three times.Under this conditions,the yield was 85.83%,the color value of capsanthin product reached at 322.46.Basic emulsion formulation as following:composite emulsifier(Span-20(2.5%) +SE(37.5%)+ Tween-80(60%))0.6 percent,compex stabilizer(Sodium alginate(0.20%)+Carboxymethyl Cellulose(0.10%))0.30%,capsanthin8.0%,adequate preservatives;optimum parameters for the shear stress J2 for 6500rpm,J1was 800rpm, emulsifying temperature is 70℃,emulsifying time K1 of 15 min,emulsifying on time K2 of 30min.Several of the above in connection with capsanthin floating rate,absorbance,the regression equation:Y1=3.0826-0.8923 X1-1.3855 X2+0.0135 X3-4.8517e-5X4+0.0021X5,complex coefficient R2=0.7926;Y2=1.6335-0.9499 X1+1.8003 X2+0.0033 X3-1.9911e-6X4-0.0020 X5,complex coefficient R2=0.8102.
