This article mainly discusses the Capsicum red pigment’s extraction and purification from Xinjiang pimiento. Through screening optimal extraction solvent, use ultrasonic-assisted solvent extraction method and response surface analysis to optimize its extraction process, at last use molecular distillation technology to further purify extractive Capsicum red pigment, thus obtaining highly purified Capsicum red pigment.This experiment studies the influence on extracting Capsicum red pigment from the aspect of different extraction solvent, extraction temperature, extraction times, extraction duration and liquid-solid ratio. Optimize best technological conditions which are used to extract Capsicum red pigment by single factor and orthogonal experiment. The experiment research results indicate the best extraction solvent is normal hexane and the optimal extraction technology parameters of Capsicum red pigment are: extraction temperature is60℃; extraction times are two; extraction duration is 3 hours and liquid-solid ratio is 5:1.This moment, the absorption value of Capsicum red pigment can reach the maximum that is0.715±0.0035.Through single factor experiment and response surface analysis software, the experiment discusses in detail the technological conditions of ultrasonic-assister extracting Capsicum red pigment, and its results indicate the optimum technological conditions are:when the liquid-solid ratio is set as 5:1; ultrasonic power is set as 120W; ultrasonic time is ser as 30 minutes; ultrasonic temperature is set as 70 ℃, the absorption value of Capsicum red pigment extracting solution is 0.786.In addition, this article also researches the purification of Capsicum red pigment extracting solution by using molecular distillation, and use single factor and orthogonal experiment to optimize its technological parameter. The results show when the revolving speed of wiped film machine is 320r/min, evaporating temperature is 40 ℃, feedstock speed is 30ml/min, and feedstock temperature is 35 ℃, the Levels value of Capsicum red pigment after purification can reach the highest that is 185.57.
