The main raw materials of beer production is barley, water and hops, and the annual demand for malting barley in China is 350 million tons currently, but China can only provide 1/3 the amount of the remaining dependence on imports. To alleviate the shortage of raw material, the beer industry should consider choosing other material for beer as the production accessories or the main raw materials instead of barley.Corn syrup has a relatively high maltose and suitable for use in combination with full wort. Without adding saccharification equipment cases, the use of corn syrup may improve the saccharification process of the production capacity and reduce costs.In this paper, the main physical and chemical indicatrix of beer is taking as the assessment targets, The experiment it using the whole wort,60%whole wort and 40% corn syrup,50% whole wort and 50%corn syrup,40% whole wort and 60%corn syrup corn syrup as accessories and replace parts of malt to brewing beer.The new craft of beer brewing incomed by the tests was:37℃feed material (30min); raise to 52℃(50min) for ending the protein, adding 0.04%(the ratio of volume and quality) dispase; raise to 70℃saccharification, until it does not change color by iodine test; raise to 78℃(30min) enzyme inactivation; filtrate the wort when it is hot; boiling the wort (90min), add hops, adding 50%corn syrup when 30min earlier than the end of boil (compared to the wort); cooling, inoculation, fermentation.By comparing with the beer fermented by the whole wort, it is discovered adding dispase at the temperature range of 52℃in saccharification, increased the content of a-amino nitrogen in wort; eliminating the process of 62℃in the saccharification, it controls the proportion of saccharide and non-saccharide mixed in wort in an appropriate range, improved the problem caused by adding corn syrup that the foam is not rich in the finish producting beer; reduce the costs, at current prices, producing 1 ton Beer can save more than¥52.9.Test showed that corn syrup can not only as supplementary materials, but also can replace part of the malt.
